2 c Beans of choice, cooked:
-black, red, kidney, pinto 1 c Corn kernels
1 Pepper, green; seeded and
-chopped 1/4 c Olives, black; sliced
1 c Tomato sauce
1/2 ts Cumin, ground
1 ts Chili powder
1 tb Tomato paste, salt-free
1 ts Oregano, dried
3/4 c Cornmeal, uncooked
2 c ;water
Egg replacer to equal 2 eggs 1 ts Salt
Combine beans, corn, pepper and olives in a 2- to 3-quart glass casserole. In a small bowl, combine
tomato sauce, tomato paste, cumin, chili powder and oregano. Pour over bean mixture. In a large glass bowl, combine cornmeal and water. Microwave, uncovered, on high for 6 minutes. Remove from microwave and stir well. Add egg replacer and salt. Stir again. Spread over bean mixture; cover and microwave on hgh for 10 minutes. Let cool slightly before serving. Serves 4. This Tamale Pie is perfect for a special fiesta for two. Great for date night, Easy to make and delicious. I decided to do videos for cooking for 2 because my wife and I are empty nester's. But there are plenty of couples out there that want good food without wasting a lot of it. So what ever the circumstances here is a great meal for two. If you want to make a family size just double the recipe and cook in an 8X8 pan
Recipe:
1/2 Lb Hamburger (Lean 93/7)
1/2 onion chopped
1 box of JIFFY cornbread Mix
1 Cup of cheddar Cheese
1/4 tsp Garlic Powder
1/4 tsp Cumin
1 tsp Chili Powder
1 Jalapeno diced
1 smoked Chipotle Pepper diced with 1 TBSP Adobo
1 TBSP Tomato Paste
1 tsp Butter
1 Egg
1/3 Cup Milk

Tamale Pie
Tamale Pie is one of my go-to dishes when I'm in a rush. The savory filling contrasts nicely with the semi-sweet buttermilk cornbread crust. Ingredients are listed below (please note 3/4 teaspoon EACH baking soda and baking powder). Printable recipe is on my website here: Thanks for both watching and commenting!
For the filling:
2 tablespoons vegetable oil
1 medium yellow onion, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon ground cayenne red pepper
1 teaspoon garlic powder
1 pound lean ground beef (or use ground turkey breast)
1 15.5 ounce can black beans, drained and rinsed
1 14.5 can diced tomatoes, well drained
1 cup (4 ounces) finely shredded sharp Cheddar cheese
2 tablespoons coarsely chopped cilantro
For the Buttermilk Cornbread Crust
3/4 cup plain flour
3/4 cup yellow cornmeal
3 tablespoons granulated sugar
3/4 teaspoon baking soda
3/4 teaspoon baking powder
Pinch of salt
3/4 cup buttermilk
1 large egg

Tamales are well known as a traditional South American dish made of dough and steamed in the husks of corn. This dish can be served as a main course but in this recipe, we create a tamale pie dessert without the traditional corn husk wrap!

Ingredients:
8 ½ oz (1 box) cornbread mix
1 large egg
½ cup sour cream
½ cup canned creamed corn
1 tbsp olive oil
5½ oz yellow onions, chopped
1 tsp ground cumin
1 tsp chili powder
2 cloves garlic, minced
1 lb ground beef
½ cup beer of your choice
⅓ cup red enchilada sauce (recipe below)
1 cup shredded cheddar cheese
1 cup shredded Monterey jack cheese
salt & ground black pepper to taste
cooking spray
Red Enchilada Sauce:
2 tbsp olive oil
¼ cup finely chopped red bell peppers
¼ cup finely chopped red onions
1 tbsp finely chopped garlic
2 tsp chili powder
1 tsp ground cumin
¼ tsp cayenne pepper
1 beef, chicken, or tomato bouillon cube
1 tbsp all-purpose flour
2 cups chicken or beef stock
¼ cup beer of your choice
15 oz (1 can) tomato sauce
Salt & ground black pepper to taste

For the enchilada sauce:
0:11 Heat the oil in a medium saucepan over medium heat. Add the peppers, onions, and garlic and saute briefly.
0:34 Add the chili powder, cumin, cayenne, and bouillon cube. Roast briefly.
0:50 Add the flour, stir to combine and cook it for another minute.
0:57 Deglaze with beer and reduce briefly.
1:05 Add the beef stock and tomato sauce, stir then bring to a boil. Reduce to a simmer, and continue simmering for about 5 to 10 minutes until the sauce is nice and thick and reduced by about a third.
1:31 Adjust the taste accordingly with salt and pepper, then allow the sauce to cool slightly.
1:43 Transfer to a blender then puree the sauce until smooth. Set aside. You can prepare the enchilada sauce a day ahead and can either be stored in the refrigerator for a week or frozen.
For the cornbread:
1:53 Preheat the oven to 400°F and grease a baking casserole.
2:01 In a large bowl, combine cornbread mix, egg, sour cream, and creamed corn. Whisk until a batter is formed.
2:24 Transfer to the baking casserole and bake for roughly 20 minutes until golden. Set aside to cool briefly.
For the beef filling:
2:45 In a large skillet over medium heat, heat oil. Add onion, garlic, cumin, and chili powder. Saute until vegetables turn translucent.
3:10 Add ground beef and saute, breaking up meat while sauteing for about 6 minutes.
3:22 Deglaze with beer & reduce briefly.
3:30 Season with salt & pepper to taste. Adjust accordingly & set aside. Drain any excess fat if necessary.
3:43 Poke the entire surface of cornbread with a fork and pour over the enchilada sauce. Add beef and top with cheeses.
4:32 Bake for about 5 minutes until cheese is melted, then broil for another 5 minutes until the cheese turns golden. Serve immediately!

You can add jalapeños to the cornbread mixture if you'd like. I did not add jalapeños because I was giving this to my five-year-old son and he does not eat hot stuff.

How To Make Tamale Pie - Easy Dinner Recipe
This Tamale Pie recipe with a cornbread crust is something even the novice cook can make. It is a recipe that tastes far better than the amount of skill needed to make.I highly recommend this Tamale Pie Recipe.
Ingredients for Tamale Pie:
1 Box cornbread or muffin mix
1 pound ground beef (or any other ground meat)
2 medium size eggs or 1 large
1/4 Cup Sour cream
14.75 Ounce can of Creamed Corn
1/3 Cup Enchilada Sauce
1 Chopped Onion
5 Jalapeno Peppers sliced (Optional)
1 Tsp Chili Powder
2 Cloves Garlic Minced (I did not use)
1 Tsp Cumin
2 Cup Shredded Cheese of your choice
Salt and pepper to taste
Chopped cilantro as garnish (optional)
Tamale Pie Directions:
Preheat oven to 400 degrees F
Mix muffin mix, sour cream and egg
Pour into a cast iron pan or oven safe skillet
Bake for 20 minutes and let cool
then
Saute onions until soft then add garlic and cook for about 30 more seconds
Add the ground beef and stir until fully cooked and broken up.
Drain off excess fat and season to taste
then
Once cornbread has cooled a bit, poke holes in it and pour enchilada sauce over it. Add the meat mixture and top with shredded cheese. Bake until cheese is melted. About 20 minutes
Garnish with cilantro
