1/2 c CHOPPED SWEET RED PEPPERS

TUNA CAKES:
2 ea 6 OZ. CANS TUNA, DRAINED AND
FLAKED 1/2 c FAT-FREE EGG SUBSTITUTE
1/4 c CHOPPED SCALLIONS
1 c FINE DRY brEAD CRUMBS
1 tb CANOLA OIL
FRESH CILANtrO SPRIG TO USE AS GARNISH SAUCE PREPARATION: IN A SMALL BOWL, WHISK TOGETHER THE YOGURT, LIME JUICE,GINGER, MUSTARD, OIL, AND CUMIN. SET ASIDE SALSA PREPARATION: IN A SMALL BOWL, MIX THE PAPAYA, SWEET RED PEPPER, CHOPPED CILANtrO, LIME JUICE, HONEY, AND GROUND RED PEPPER. SET ASIDE. TUNA CAKE PREPARATION: IN A LARGE BOWL, COMBINE EGG SUBSTITUTE, TUNA, SCALLIONS, 2/3 OF brEAD CRUMBS, AND 1/4 CUP OF THE GINGER SAUCE. MIX WELL. SHAPE INTO

Aku Bone- Tuna Sandwich- Poke Bowls! Aku for Breakfast, Lunch and Dinner! Hawaiian Skipjack Tuna!
Aku is Hawaiian for skipjack tuna and it’s a favorite for Kimi Werner. This smaller tuna is sometimes snobbed because it has a stronger flavor and softer meat that doesn’t last as long as the larger species of tuna. However, this fish is extremely delicious, versatile and low in mercury. It is treasured in Hawai’i and on this episode, Kimi makes it three ways for breakfast, lunch and dinner! She starts with the Hawaiian classic- aku bone with chili peppah watah! For lunch she makes a gourmet tuna sandwich and she finishes the day at the beach eating shoyu poke bowls with friends!

Salmon with Thai Corn & Bean Salsa - Hot Thai Kitchen!
Thai-style corn and bean salsa is the perfect topping on any fish. Sweet corn, creamy beans, and tart and refreshing grapefruit go super well in the spicy dressing. It's healthy and gluten-free, this salsa recipe is versatile and such an easy recipe to make. I'm using salmon, but you can use any other fish you like. The flavour inspiration comes from a Thai green papaya salad or som tum. You can even use the salsa to top a taco!

Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her playtime in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via YouTube videos, her cookbook, and cooking classes.
