~ crunchy tuna patties (for one or two) ~
An easy mid-week supper. Recipe follows.
CRUNCHY TUNA PATTIES
5 oz can of water packed albacore tuna, well drained
1/4 cup fresh bread crumbs
1 egg
1/4 cup finely shredded carrot
1/4 cup finely shredded zucchini
1 green onion, finely sliced
1/4 teaspoon dried dill
1/4 teaspoon kosher salt
1/4 teaspoon old bay seasoning
a couple grinds of black pepper
1/3 cup panko crumbs
3 tablespoons light cooking oil
2 tablespoons butter
Combine tuna, vegetables, egg, and seasonings. Form into two patties and coat in panko crumbs. Melt butter and oil in skillet over medium heat. Fry tuna patties on each side until a medium golden brown. (I turned the heat to very low and covered the patties with a sheet of foil for several minutes to assure the center was cooked.)
This makes two generous sized patties.
Serve as is with lemon and tartar sauce. Or serve as a sandwich on a fresh roll.

Makes 3-4 Patties (depending on their size)
Tartar Sauce
- 1/4 cup mayonnaise
- 1/4 cup sweet relish
- 2 TSP shallots, finely chopped
- 1 TSP fresh dill, finely chopped
- Fresh lemon juice, to taste
Tuna Patties
- 2 (5oz) can @wildplanetfoods Albacore Wild Tuna
- 2 TB mayonnaise
- 2 TB whole grain mustard
- 1 egg
- 1 TB Old Bay Seasoning
- 1 TB fresh parsley, finely chopped
- 2 garlic cloves, grated
- Panko breadcrumbs, as needed
- Juice from half a lemon
- Salt and Pepper, to taste
- Oil for fryer
- Brioche Buns
- Lettuce
- Freshly sliced tomatoes
In a small bowl, add all the tartar sauce ingredients and mix until fully combined. Taste and adjust lemon juice and seasoning as needed. Then set aside in the fridge until you’re ready to use.
In a large bowl, add the tuna along with the remaining ingredients. Then add the Panko breadcrumbs a few tablespoons at a time until you can form the tuna into patties. Once combined, form into patties and set aside in the fridge until you’re ready to fry.
Heat a skillet over medium-high heat, once hot drizzle with oil. Add the the tuna patties and cook, flipping once, until each side is golden brown and crispy. Once done, remove from the pan and repeat with the remaining patties. Make sure your pan is hot, otherwise the patty will stick and could fall apart - you want patties to really sizzle as soon as you add them to the pan.
If you’re making burgers assemble in the following order - toasted bottom bun, generous spread of tarter sauce, lettuce, tuna patty, tomato, salt and pepper, toasted top bun with a generous spread of tartar sauce.

Remoulade Sauce ►
Tuna Cakes
Ingredients:
4 ounce can of tuna, drained & patted dry
1 egg
1/2 Tbs mayonnaise
1/2 Tbs sour cream
1/4 tsp salt
1/4 tsp creole seasoning
1/2 tsp lemon pepper
1/2 tsp onion powder
1/2 tsp dried dill
1/2 Tbs dried chives
2 Tbs parmesan cheese
2 Tbs almond flour
2 Tbs oil for frying
Serve with lemon wedges.
Makes 2 tuna cakes (one serving)
