How To make Sweet Onion Fajitas
1 lb Sweet onions, finely chopped
3/4 lb New potatoes, finely chopped
4 Plum tomatoes, finely
-chopped 6 oz Carrots, finely chopped
1 Clove garlic, minced
1 Jalepeno, minced
1/2 c Dry white or red wine
4 lg Flour tortillas
Freshly ground black pepper -to taste 2 tb Minced cilantro
2 oz Grated Monterey Jack of
-Muenster cheese 8 ts Non-fat plain yogurt
Combine first seven ingredients in a heavy skillet. Bring to boil; reduce heat and simmer, covered, about 15 minutes, until vegetables are tender. Season with pepper and stir in cilantro. Heat tortillas in oven. Spoon vegetable mixture onto center of each tortilla. Top each with cheese and yogurt. Roll up and serve. Source: Rock Springs Sweet Onion Festival Cook Book 1992

Salsa Cacahuate Recipe
– 1 Cup of Peanuts
– 20 Chile de Arbol
– 2 Garlic Cloves
– Olive Oil
– Add to a pan and toast. Be carefuly not to burn the chile de arbol
– Add all ingredients to a blender
– Salt to taste
– Add half a cup of water and adjust to your desired consistency
– Enjoy!

1kg (2.2lbs) - Chicken Breast, Sliced Into Strips
2 tsp (5g) - Paprika
2 tsp (5g) - Onion Powder
2 tsp (5g) - Garlic Powder
2 tsp (5g) - Ground Cumin
1 tsp (1g) - Chilli Powder
2 tsp (6g) - Cornstarch
1 tsp (5g) - Sea Salt Flakes
1 Tbsp (20ml) - Olive Oil
2 - Brown (Yellow) Onions, Thinly Sliced
1 - Red Bell Pepper (Capsicum), Thinly Sliced
1 - Yellow Bell Pepper (Capsicum), Thinly Sliced
5g (0.2oz) - Fresh Oregano, Roughly Chopped (Substitute for 1 1/2 tsp - 2g of Dried Oregano)
Guacamole -
1 - Avocado, Coursly Mashed
1/4 - Red Onion, Diced
1 - Tomato, Diced
1/2 - Jalapeno, Diced
5g (0.2oz) - Coriander (Cilantro), Roughly Chopped

Very few plates at a Mexican restaurant grab your attention like a plate of sizzling fajitas. First you hear it, then you smell it…then you wish you ordered that platón instead of the chicken enchiladas.
In this video we’re cooking up Restaurant Style Fajitas. I decided to grab some outside skirts for maximum tenderness, but beware when shopping for them. This particular cut goes fast in stores as restaurants demand such large quantities of it. Either side of skirt will have you eating good either way.
And here is the weekly Pro Tip: Don’t over cook them! Common sense, I know, but you would be surprised how easy these can get away from you. Both the scorching plancha and the sizzling platter can keep the fajitas cooking even more and dry out what would otherwise be delicious and tender meat. Shoot for a medium or even medium-rare before you plate it on skillet to serve.
I always say that BBQ is simple, and although we aren’t on a live fire today the principles still apply. A scorching hot heat source, a great cut of beef and a little technique is all it takes for a dinner that will blow away any one who is lucky enough to chow down.
