How To make Sweet Onion Quiche
1 Pie crust, unbaked
1/4 c Evaporated milk
3/4 c Onions, chopped
3 Eggs
1/2 c Ham, diced
1/2 c Sour cream
3 tb Butter
1/2 c Crumbled bacon
1 1/2 c Mild American cheese, grated
1 c Swiss cheese, grated
1 c Caraway seed cheese, grated
Melt butter in skillet; saute onions and ham until done. Place in bottom of unbaked pie crust. Mix cheese, milk, eggs, and sour cream and pour over onion and ham mixture. Bake at 350 degrees for 30 minutes; garnish with crumbled bacon. Source: Rock Springs Sweet Onion Festival Cook Book 1992

A rustic goat cheese quiche that makes a great meal anytime of day. It’s made with few basic ingredients. You can use ready made store puff pastry or make your favourite pie or short crust. When you blind bake it, make sure you make enough holes with a fork and weight it down as it will puff up. I use parchment paper with blind backing beads, you can use dry uncooked rice or anything similar. Serve the goat cheese quiche with a well dressed crisp salad.

Bacon, Stilton and Carmeslised Onion Quiche
Not for the faint-hearted. My bacon, blue cheese and caramelised onion quiche recipe will challenge your tastebuds and improve your cooking skills. It’s cheesy, it’s salty, it’s tangy. It’s a taste sensation.
Stilton and bacon are a flavour force to be reckoned with in this recipe. The pungent blue cheese and smoky cure of the bacon are formidable partners that pack a real punch. Caramelised onion threads offer a sweet contrast to those two big guns in my recipe.
Quiche takes a bit of effort, but you can easily spread it out over a couple of days to avoid kitchen fatigue. Check out tips in my recipe lined below!

For the shortcrust pastry
250g/1 ¾ cup + 1 tbsp plain flour
125g/ ½ cup + 1 tbsp cold unsalted butter cubed
1 tsp salt
3 tbsp ice cold water
For the filling
1 onion sliced
6 strips streaky bacon
100g/3.5 oz Stilton cheese or any other cheese
5 large eggs
200ml/1 cup double/heavy cream
100ml/1/3 cup whole milk

A tender, flaky, buttery homemade pie crust filled with caramelized onions and roasted red peppers. Topped with an egg custard mixture and baked until set. Perfect for brunch or entertaining family and friends.

Makes one 9-inch quiche
Quiche crust / Pâte Brisée
▢1 ½ cup (190 g) All-purpose flour
▢½ teaspoon Salt
▢4 oz (113 g) Unsalted butter (chilled and cut into cubes)
▢1 large Egg yolk
▢2 tablespoon Water
Quiche filling
▢½ cup (60 g) Ricotta cheese
▢½ small Garlic (finely minced)
▢2 tablespoon Olive oil
▢2 large Caramelized onions (thinly sliced)
▢2 - 3 large Roasted red peppers
▢½ cup Parsley (finely chopped )
▢½ cup (60 g) Cheddar cheese
▢½ cup (120 g) Gruyere or Gouda cheese
Custard
▢3 large Eggs
▢2 tablespoon All-purpose flour
▢½ cup (60 g) Ricotta cheese
▢½ cup (120 ml) Heavy cream (or half/half)
▢½ cup (120 ml) Whole milk
▢¼ teaspoon Kosher salt
▢¼ teaspoon Black pepper
