Preheat oven to 350 degrees. Beat egg whites and cream of tartar at high speed of an electric mixer 1 minute. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves (about 2 to 4 minutes). Stir in remaining ingredients. Drop by teaspoonfuls onto cookie sheets lined with aluminum foil. Place in oven, and immediately turn off heat. Do not open oven door for at least 8 hours. Carefully peel cookies -----

달걀 흰자와 설탕, 2가지 간단한 재료로 만드는 달콤한 디저트로는 머랭쿠키가 단연 1위 아닐까요. 중탕하는 과정이 번거롭지만 입안에서 사르르 녹는 식감이 좋은 '스위스' 머랭 위에 미니 야채 크래커와 프레첼로 단짠단짠한 매력을 더했어요. 하나둘 집어먹기 좋고 귀여운 비쥬얼으로 선물하기도 좋아요. 바삭함이 생명인 머랭 쿠키는 해쨍쨍 보송한 날에 만드는 것을 추천해요.
| 재료 Ingredients(약 55~60개)
달걀 흰자 2개 70g two egg white
흰 설탕 white sugar 90g (흰자 g×1.3배)
바닐라 익스트랙트 vanilla extracts 3g
레몬즙 lemon juice 3g
데코용 크래커 pretzel or crackers
* 설탕 vs 슈가파우더
일반적인 슈가파우더에는 고운 흰 설탕(95%) + 전분 (5%) 구성으로 머랭을 안정적으로 만들어주고 설탕을 사용했을 때보다 좀 더 뽀득뽀득한 식감이에요.
| 머랭쿠키 만들기 recipe
1. 흰자에 설탕, 레몬즙, 바닐라 익스트랙트를 넣고 가볍게 섞기
Add sugar, lemon juice and vanilla extract the white and mix it slightly.
2. 중탕으로 50도까지 올리기(스위스 머랭)
Heat it up to 50°C with double boiling (Swiss meringue)
* 프렌치 머랭
중탕없이 설탕을 3~4번으로 나눠 넣으며 스위스머랭과 동일한 방법으로 핸드믹서를 고속으로 돌려주세요. 스위스 머랭에 비해 바삭함이 덜하고 입에 넣으면 스르르 바로 녹아요.
3. 고속으로 단단하게 휘핑 (럭셀 13단, 5~7분)
Whip it hard at high speed.
4. 짤주머니에 머랭 반죽을 옮겨담기
Put meringue dough in a piping bag.
5. 오븐팬에 머랭반죽을 짜고 데코 과자 올리기
Squeeze meringue on an oven pan and put pretzels on it.
6. 예열해둔 오븐에서 100도 80~90분 굽기
Bake in the preheated oven 100°C for 80~90 min.
* 크랙이 생기는 이유는 오븐 온도가 높기 때문. 10°C 정도 온도를 낮춰주세요. 가정에서 쓰는 미니 오븐은 대부분 100도부터 가능한데 오븐 문 사이에 장갑이나 행주 등을 껴서 설정 온도보다 낮춰줄 수 있어요.
7. 식힘망에서 충분히 식히고 밀폐용기에 보관하기
Cool it down and store it in a sealed container or zipper bag to keep it crisp.

INGREDIENTS
170g NESTLÉ Aero for Baking, broken into pieces
2 large egg whites
1 ml cream of tartar
½ tsp vanilla essence
½ tsp salt
¼ cup brown sugar
Serving suggestion:
NESTLÉ Hot Chocolate
METHOD
1. Preheat the oven to 180° and line a baking tray with baking paper.
2. Place the NESTLÉ Aero for Baking chocolate in a heatproof bowl. Microwave in 15-second intervals, stirring in between until the chocolate is melted.
3. In a large bowl, add the egg whites, cream of tartar, vanilla essence and salt. Using a hand mixer, beat the egg whites until soft peaks form. Add in the sugar, beating until stiff peaks form.
4. Gently fold the melted chocolate into the eggs until combined. *Chef’s Tip: Avoid overmixing to prevent the egg whites from losing air.
5. Use a tablespoon to spoon the batter onto a baking sheet, allowing space between each for the cookies to spread during baking. Bake for 8-10 minutes, until crackly on the top but chewy on the inside. Allow to cool before serving alongside a mug of NESTLÉ Hot Chocolate and ENJOY!

Ingredients:

1/2 cup sugar(90g)
pinch of salt
1/4 tsp cream of tartar or vinegar
bake for 90 mins to 110mins at 100°C (212°F) depending on the thickness of your cookies. If you want chewy bake 30 mins less.
notes:
1. don't stop whisking once egg white starts to heat up otherwise egg will be cooked at the bottom.
2.. don't increase the baking temperature, you don't want to brown the cookies.
3. turn the baking tray in between for even baking.
