How To make Sweet Potato Cookies
1/3 c Butter; softened
1/3 c Brown sugar
1/3 c Honey
1 Egg; beaten
1 c Whole-wheat flour
1/3 c Nonfat dry milk powder
1 ts Baking powder
1/4 ts Baking soda
3/4 ts Salt
1/4 ts Cinnamon
1/4 ts Nutmeg
3 tb Wheat germ
1 c Shredded sweet potato
1 ts Grated lemon rind
1/4 c Grated coconut
1 1/4 c Rolled oats
1/3 c Chopped nuts
Preheat oven to 375 degrees. Cream butter, sugar and honey together in bowl; beat in egg. Stir flour, dry milk, baking powder, baking soda, salt, cinnamon, nutmeg and wheat germ together in a separate bowl. Add to egg mixture and beat well. Stir in sweet potato, lemon rind, coconut, oats and nuts; mix well. Drop dough by teaspoons onto greased cookie sheet. Bake for 10 to 12 minutes. Remove from cookie sheet and cool on rack. -----

SWEET POTATO COOKIES
Ingredients;
Makes 24 Cookies
3 Cups of All-Purpose Flour
1/2 Cup of Sugar
1 Cup of Light Brown Sugar
2 Tsp of Cinnamon
1 Tsp of Baking Soda
2 Sticks of Unsalted Butter (Room Temperature)
2 Large Eggs (Room Temperature)
1 Medium Baked Sweet Potato
2 Tsp of Vanilla Extract
1/2 Cup of Coconut Flakes (Optional)
Directions
1. In a mixing bowl, cream butter, sweet potato, cinnamon and sugars together.
2. Add eggs and vanilla and mix well.
3. Add baking soda to flour and then add that mixture to wet ingredients.
4. Once flour has been mixed in, add coconut and mix well.
5. Grease a cookie sheet and place scoops of cookie dough onto the cookie sheet. You could make these as little or big as you would like.
6. Bake on 350 for 10 - 12 minutes until brown around the edges.
7. Let cool on cookie sheet for 5 minutes before transferring to a wire rack to cool completely or eat while still warm. Enjoy!

SWEET POTATO OAT MINI COOKIES
These cookies are really yummy, they are a good size for little hands to hold and healthy.
My little one loves them very much! I have to take the snack pot away from him otherwise he eat the whole pot in less than 10 minutes???? !

INGREDIENTS:
☆Dry ingredients
▪︎1/2 cup of oat flour
▪︎1/4 cup of porridge oat
▪︎1/4 cup of self-raising flour
▪︎1 tsp baking powder
▪︎1/2 tsp cinnamon
▪︎ 2 tsp chia seeds
☆Wet ingredients
▪︎1 cup of cooked sweet potato
▪︎1 ½ large size of ripped banana
▪︎2 tbsp coconut oil
▪︎1/2 tsp of vanilla essence ( or vanilla extract )
** if your cookie batter is too wet, you can add more baking time to 20-25 minutes or till the cookies turn brownish.
