3 Egg whites
1/4 ts Cream of tartar
3/4 c Sugar
3 tb Cocoa
1. Beat egg whites with cream of tartar in large mixing bowl until
foamy. 2. Add sugar, 1 T. at a time. Beat at hightest speed until stiff and
glossy. Do NOT underbeat. Remove 3/4 c. meringue to small mixing bowl; set aside. 3. Stir cocoa into meringue in large mixing bowl until thoroughly
combined. Drop cocoa flavored meringue by level measuring tablespoon, about 1 1/2 inches apart, onto aluminum foil lined baking sheets. Make small
indentation in center of each with top of teaspoon. 4. Spoon 1/2 teaspoon reserved plain meringue into each indentation.
Bake at 275 degrees for 25 minutes. Turn off oven; leave meringues in oven with door closed for 1 hour. Remove from oven. Cool completely. Makes about 3 dozen cookies.

2 tbsp chopped chocolate or chocolate chips
Instructions for making double chocolate meringue cookies:

- Then add in your sugar to the bowl
- Now mix everything together with a whisk until meringue forms
- Now you can add in your cocoa powder
- And also add your chopped chocolate or chocolate chips

ZUTATEN für einen Backblech 30x40 cm:
60 g Eiweiss
120 g Zucker (einschliesslich Vanillezucker nach Ihrem Wunsch)
man kann auch dazu eine Prise Salz oder eine Prise Zitronensäure nehmen
Ich backe die Baiser im vorgeheizten Backofen bei einer Temperatur von
85 Grad Celsius (185° F) Ober-Unterhitze ohne Konvektion etwa 90 Minuten
In Ihrem Backofen brauchen Sie vielleicht weniger oder etwas mehr Zeit dafür!

Vanilla Bean Meringues Recipe
Makes about 3 dozen
Ingredients:
1 ¼ cup sugar
½ tsp. salt
4 extra-large egg whites
½ tsp. vanilla extract
seeds from 1 vanilla bean
Directions:
1. Combine the sugar and salt in a bowl.
2. Whisk the egg whites on medium speed in a separate bowl until they are very frothy and soft peaks begin to form.
3. Gradually add the sugar mixture to the egg whites and whip until medium peaks form.
4. Add the vanilla extract and seeds to the egg whites, increase the whisk speed to high, and whip until stiff peaks form.
5. Transfer the egg whites to a piping bag with a star or rosette tip and pipe little mounds on three parchment paper-lined Air Flow Racks. Place the Racks on the bottom, middle, and top shelves of the PowerXL Air Fryer Oven.
6. Press the Power Button and then the Dehydrator Button and increase the cooking temperature to 170° F and the cooking time to 3 ½ hrs.
Eric’s Tip: Adding 2 tbsp. dark cocoa powder turns these meringues into decadent treats. Don’t forget to drizzle the top with chocolate!
