low calorie cooking spray
1 large onion
400g small new potatoes, cooked
6 eggs
25g fresh parsley
Spray a large non stick frying pan with low calorie cooking spray and place on a medium heat. Add the sliced onion and fry for 10 minutes. Add a splash of water, re-cover and steam for a further 10 minutes.
Cut 400g cooked new potatoes into slices and add to the pan.
Beat 25g parsley into 6 eggs, season and pour into the pan, shaking gently to spread evenly.
Cover and cook on a low heat for around 10 minutes until the egg is almost set.
Turn the omelette and cook for a further 2 minutes.
Serve hot or cold with plenty of veg or salad.

Mexican Omelet
Ingredients:
3 large eggs
1-2 Jalapenos, deseeded and diced
1 roma tomato, deseeded and diced
¼ cup diced onion
1 tbsp water
2 tbsp olive, canola, or vegetable oil
1 tbsp butter
½ cup of shredded mexican cheese
Directions:
Deseed and dice 1-2 jalapenos, 1 roma tomato and ¼ cup of onion. Set aside. Mix 3 large eggs and 1 tbsp water in a medium bowl. Whisk the egg mixture for a full minute to impart some air into the eggs. This will ensure that your omelet is light and fluffy. Heat a medium to large nonstick skillet on medium heat and add 1 tbsp oil. Once the oil is hot, add the diced vegetables and saute for 2 minutes. Be sure not to overcook them. Now put them in a bowl and set aside. Clean the pan out with a paper towel and heat the pan on low for a full minute; then add the egg mixture to the pan. Let the eggs sit for a minute. Now separate small pockets in the middle of the eggs so that the mixture has an opportunity to filter down and cook through. Once you see that the eggs are no longer “runny” on top, you can add your sauteed vegetables to one side of the omelet. You can also add the cheese at this time. Carefully fold the side with no veggies over the other side. Cook for an additional minute. You can flip the omelet and cook for another minute, and top with some more cheese. Slide the omelet onto a plate and top with cilantro and serve with sliced avocados and tomatoes. Enjoy!

Low calorie cooking spray

Salt and freshly ground black pepper
Break the eggs into a bowl, season and a teaspoon of cold water. Beat gently with a fork to combine the whites and yolks. Take care not to over-beat or the omelette will not go fluffy and light.
Put the pan on a high heat and lightly mist with low calorie cooking spray. When the pan is really hot, pour in the eggs, tilting the pan to spread the omelette mixture evenly over the base.
When the underside of the omelette is set and golden and there is virtually no liquid egg left, fold the omelette over and slide it out of the pan to a warm plate and add your choice of warm fillings.
Tip: Choice of free fillings (e.g. ham, mushroom, salmon, prawns, onion, chicken, peppers, chilli, bacon or spinach)
