How To make Sunshine Muffins
1 lg Egg; beaten
2/3 c Sugar
1/2 c Orange juice
2 tb Margarine; melted
2 c Biscuit mix
1/2 c Chopped pecans
1/2 c Orange marmalade
Combine egg, sugar, orange juice and margarine in a large bowl. Mix well. Stir in biscuit mix. Mix well. Fill greased muffin tins two-thirds, fill with batter. Bake in a preheated 400 degree oven for 20 to 25 minutes. From - the Saginaw News Cookbook Formatted by Beverly Wilcox -----

Learn how to make soft morning/breakfast muffins with fresh ingredients.
Ingredients:
2 Cups Whole Wheat or All Purpose Flour (304g)
3/4 Cup Sugar (144g)
2 Teaspoons Baking Soda (6g)
1 Tablespoon Cinnamon (9g)
1/4 Teaspoon Salt (1.5g)
3 Eggs
2 Teaspoons Vanilla Extract (10ml)
1/2 Cup Vegetable Oil (120ml)
1/2 Cup Unsweetened Applesauce (122g)
2 Cups Grated Carrot (About 2 Large Carrots)
1 Large Grated Apple
1 Cup Crushed Pineapple, Drained (112.5g)
1 Cup Chopped Walnuts or Pecans (112g)
Directions:
1. In a medium bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon until well combined. Set aside. In a large mixing bowl, whisk together the eggs, vanilla, oil, and applesauce until combined. Stir in the grated carrot, apple, and pineapple. Add flour mixture and stir just until combined. Gently fold in the pecans or walnuts.
2. Line a muffin tin with paper liners. Spoon batter into each cup, filling it completely. Bake in a preheated oven at 350F for 25-30 minutes or until an inserted toothpick comes out clean. Let muffins cool completely.

1/4 cup pecans finely chopped
1 1/4 cups finely chopped raw carrots (food processor)
1 large apple, peeled, cored, and finely chopped (food processor)
1 1/3 cups all-purpose flour
3/4 cup granulated white sugar
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup coconut (sweetened or unsweetened)
2 large eggs
1/2 cup vegetable oil
1/2 teaspoon pure vanilla extract
Muffin Topping Mix
4 TBLS light brown sugar
1/4 cup finely chopped pecans
1/2 tsp ground cinnamon
Prepare muffins as shown in the video

1/2 cup vanilla soy yogurt (or any flavored yogurt)
1/2 cup plain or vanilla soy milk
1 tbsp ground flaxseed
1/4 cup canola oil
1/2 cup brown sugar
1/2 cup crushed pineapple, well drained (use canned only; reserve the juice)
1/3 cup pineapple juice, reserved from canned crushed pineapple
1/2 cup finely shredded carrot (about 1 large carrot)
1 heaping tsp finely grated orange zest (from 1 large orange)
1/2 cup Thompson or golden raisins
1 1/3 cup cups whole wheat pastry flour or all purpose flour OR combination of both
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground ginger
