MANDARIN ORANGE CAKE! YOU WILL NOT BELIEVE WHAT HAPPENED TO THS CAKE!
Mandarin Orange Cake
1 package cake mix ( I used lemon)
1 15 ounce can mandarin oranges
4 eggs
1/4 cup oil
Combine cake mix, oranges. Eggs and oil
Mix good
Pour batter into a greased and floured cake pan
Bake 325 degrees for 20 to 25 minutes
Topping
1 16 ounce tub cool whip
1 5 1/2 vanilla instant pudding
20 ounces can crushed pineapple
3 tablespoons reserved pineapple
Mix throughly and refrigerate and frost only cool cake.

Pig Pickin' Cake

Ingredients
Cake:
Nonstick baking spray, for the pan
One 18.25-ounce box yellow cake mix
8 tablespoons (1 stick) salted butter, softened
1 teaspoon vanilla extract
4 large eggs
One 23.5-ounce jar mandarin oranges, drained and 1/2 cup juice reserved
Topping:
4 ounces cream cheese, softened
1/2 cup confectioners' sugar
1 1/2 cups chilled heavy cream
2 teaspoons vanilla extract
One 20-ounce can crushed pineapple, drained
Directions
For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch cake pan with baking spray.
Combine the cake mix, butter, vanilla, eggs and 1/2 cup reserved mandarin juice in the bowl of an electric mixer and beat for 4 minutes on medium-high speed. Add 1 1/2 cups of the drained orange slices and beat again until the oranges have broken into small pieces, about 1 minute. Transfer the batter to the prepared cake pan and bake until golden brown and set, 25 to 27 minutes. Allow to cool completely, then turn out onto a large platter.
For the topping: Cream together the cream cheese and confectioners' sugar in the bowl of a stand mixer fitted with a paddle attachment, 1 to 2 minutes. Remove the mixture to a small bowl. Add the cream and vanilla to the stand mixer bowl and switch to the whisk attachment, then whip until soft peaks form, about 2 minutes. Add the cream cheese mixture, distributing it evenly around the bowl. Whip until stiff peaks form, 3 to 4 minutes. Fold in the pineapple.
Spread the frosting evenly over the cooled cake and refrigerate for at least 2 hours. Garnish with the remaining mandarin orange slices.

Sunny’s Sunshine Cake - What’s Cooking Wednesday
This fluffy cake is a must-try! Find the recipe below:
INGREDIENTS
6 eggs
1/2 cup water
1 tsp vanilla
2 cups sugar
1 1/2 cups cake flour, sifted
1 tsp baking powder
1/2 tsp cream of tartar
2 1/2 cups powdered sugar
2 sticks butter
orange juice
PREPARATION
1. Preheat oven to 325 degrees F.
2. Separate egg yolks and egg whites.
3. Mix 6 egg yolks, 1/2 cup water and 1 tsp vanilla.
4. While mixing, add 2 cups of sugar.
5. In a separate bowl, add 1 1/2 sifted cake flour and 1 tsp baking powder.
6. Fold into to egg yolk mixture, sifting in a little at a time.
7. In another separate bowl, beat 6 egg whites with 1/2 tsp cream of tartar until foamy.
8. pour the egg yolk mixture into the egg white mixture and gently fold together.
9. Pour into an ungreased 10-inch round tube pan (use spatial to remove air bubbles).
10. Bake at 325 degrees F for 60 minutes.
FOR FROSTING
1. Mix together 2 1/2 cups powdered sugar and 2 sticks of butter. While mixing, add enough orange juice to thin for spreading.
2. Spread orange butter cream frosting evenly over cake.
