How To make Sunburst Crab Muffins
1/2 lb Maryland crabmeat; (8 ozs)
3 English muffins
Butter or margarine; - for spreading 1 md Stalk celery
1/4 c Mayonnaise
2 ts Lemon juice
1/8 ts Lemon and pepper seasoning
1/8 ts Seafood seasoning
1/4 c Sliced almonds; optional
1 pk Frozen asparagus spears;
- 10 oz; cooked 3 American cheese slices;
- 1 oz each Paprika for garnish Recipe by: The Maryland Seafood Cookbook. Remove all cartilage from Crabmeat. Split, toast and butter English muffins. Finely chop celery. In a bowl, mix celery, mayonnaise, lemon juice, seasonings and almonds, if used. Gently mix in Crabmeat. Arrange muffin halves on cookie sheet. Divide asparagus spears among muffin halves. Cover with crab mixture. Cut each cheese slice diagonally into quarters. Place two triangles on each sandwich. Sprinkle paprika over top of each. Bake at 400 degrees until cheese melts and becomes bubbly, about 15 minutes. Formatted for you by: Bill Webster -----

Homemade Japanese Street Food - TAIYAKI CAKE | Janet and Kate
*Homemade Taiyaki Recipe:
Taiyaki Grill Pan
Ingredients:
1 1/4 cup cake flour
1 tsp baking powder
1 tsp baking soda
1 large egg
3/4 cup whole milk
4 Tablespoons sugar
Your choice filling ( red bean paste, black bean pastes, custard cream, nutella, jam, chocolate chip, fruit etc.)
Oil for greasing the grill pan
Instructions:
1. Sift the cake flour, baking powder and baking soda into a bowl.
2. Add the sugar and whisk well to combine.
3.In an other bowl, whisk the egg and then add the milk to mix well.
4. Add the egg mixture into the dry ingredients and whisk well. Rest the batter in the refrigerator for at least one hour.
5. Heat the taiyaki pan and grease the pan with oil using a brush.
6. Fill the taiyaki pan mold about 60% full over medium-low heat.
7. Put the filling of your choice in the center of each mold and pour the batter on top to cover it.
8. Close the lid and immediately flip.
9. Cook for 2-2.5 minutes each side. Open and check to see if taiyaki is golden brown.

*Homemade Sweet Red (or Black) Bean Paste Ingredients:
8 oz dried adzuki beans ( or black bean)
Water as needed for boiling
1/2 cup white sugar ( add more sugar if you want sweeter)
1/4 tsp salt
1/4 cup vegetable oil
Instruction:
1. Rinse the beans and place in a large bowl. Cover with water and soak overnight.
2. Drain and place the beans in a pot with 3 cups of water and bring to a boil. Reduce the heat to medium low and simmer the beans for 1-2 hours until soft, stirring occasionally. If there is still a lot of water in the pot, continue cooking until there is only a thin layer of water covering the beans.
3. Press the beans and any excess liquid through a fine mesh strainer set over a pot. Discard the leftover skins.
4. Add the sugar, salt, and vegetable oil to the red bean paste and cook over medium low heat, stirring often until the paste thickens. Allow to cool.

*Homemade Custard Cream Ingredients:
1 cup milk
3 tablespoons white sugar
1 pinch of salt
2 eggs
3 tablespoons cornstarch
1 teaspoon vanilla extract
Instruction:
1. In a bowl, whisk the eggs, sugar and cornstarch together.
2. Heat the milk in a saucepan over medium heat until simmering, stirring occasionally.
3. Transfer the milk into the egg mixture whilst whisking, one ladle at a time, add the vanilla extract mix well.
4. Pour the custard mixture back in the pot and cook over medium heat until it has thickened to the desired consistency. Allow to cool.
