How To make Steamed Fish and Spinach
16 oz Pkg frzn Fish Fillets,thawed
1/2 c Chopped Onion
1 x Clove Garlic, minced
1 T Olive or vegetable Oil
1/4 c Dry White Wine
1/4 t Dried Tarragon or Basil
1/8 t Salt
1/8 t Pepper
10 oz Pkg frozen chopped Spinach *
1 x Green or Sweet Red Pepper **
* thawed and well drained ** cut into thin strips Cut block of fish crosswise into 4 equal pieces. In a small skillet, cook onion and garlic in hot oil till tender. Remove from heat. Stir in wine, tarragon or basil, salt, and pepper. Return to heat and boil gently about 2 minutes or until most of the liquid has evaporated. Remove skillet from heat and set aside. Place 1/8 of the spinach on four 12x18" pieces of heavy foil. Place 1 portion of fish on each portion of spinach. Spoon onion mixture evenly over fish. Top with remaining spinach and the green pepper strips. Bring up long edges of foil and, leaving a litle space for steam expansion, seal tightly with a double fold. Then fold short ends to seal. Grill foil packets, seam side up, directly over medium coals about 20 minutes or till fish flakes easily when tested with a fork. Turn packets over twice. ********************************************************** Per serving: 162 calories, 22 g protein, 6 g carbohydrates, 4 g fat, 49 mg cholesterol, 169 mg sodium, 815 mg potassium.

Marinated basa fish fillets topped with bean sprouts, ginger juliennes and chopped coriander leaves, steamed to perfection.
STEAMED FISH
Ingredients
400 grams basa fillet
2 tablespoons light soy sauce
Salt to taste
Juice of 1 lemon
½ cup bean sprouts
2 inches ginger, cut into juliennes
4 tablespoons chopped fresh coriander leaves
Method
1. Heat sufficient water in a steamer.
2. Take basa fillets on a plate. Add soy sauce, salt and lemon
juice and rub well.
3. Place the basa fillets onto 4 individual aluminium foil sheets
and create a parcel. Add some bean sprouts, ginger juliennes
and 1 tablespoon chopped coriander and place the parcel in
the steamer. Steam for 10 minutes.
4. Serve hot.
Preparation Time: 10-12 minutes
Cooking Time: 10-12 minutes

Steamed Yellow Tail with Spinach and Citrus Sauce - PCC Nourishing Recipe

SERVES 4
• 2 fillets yellow tail fish
• 4 basil leaves
• ½ lemon
• 200g spinach
• 1 clove garlic
CITRUS SAUCE:
• 2 shallots, sliced
• 1 clove garlic, sliced
• ½ lemon peel
• ½ sweet orange peel
• 300ml fish broth
• 2 sweet oranges, take the juice
• 1 lemon, take the juice
• Thyme leaves to taste
• Bay leaves to taste
• Salt and pepper powder to taste
• Grapeseed oil
DIRECTIONS
• Sprinkle fish fillets with salt and pepper, and place a basil leaf on each fish fillet. Steam for 10 minutes or until cooked.
• Boil water in small pot, add a little salt into the water. Boil spinach for 30 seconds. Remove spinach and cool it in ice water and strain dry.
• Preparing citrus sauce: Stir fry shallots and garlic in frying pan over medium heat. Add the sweet orange peel and lemon peel, continue frying until fragrant, add pepper, salt, thyme and bay leaves. Add fish broth and bring to boil. Continue simmering until the broth is reduced to half.
• Add sweet orange juice and lemon juice into pot, adjust the taste and serve over fish and spinach.

Preparation:
-Seasoned your fish fillet with the ingredients and set aside . while you are preparing your steamer for quick cooking
- when it gets boiled add your fish fillet and cover.(cook for 5mins)
