How To make Spinach Fritada
1 1/4 lb Cottage Cheese
12 oz White Cheddar Cheese; grated
4 pk Frozen Spinach;8 oz,thawed
6 oz Yellow Cheddar Cheese;grated
15 Eggs
1/4 lb Farval For Passover
Thaw spinach overnight in a colander. Wet the Farval till well soaked then drain well. Mix spinach (be sure all water has been removed) with well beaten eggs in a large bowl. Put in remaining ingredients and mix well. Spray Pam on large baking pan(s) that have a 1 or 2 inch lip. Bake for 40-45 minutes at 350. Cool then cut into small squares for appetizers. Can also be cut larger as a vegetable for dinner. Best served hot. From my mom, Lillian Levy, Seattle. Wa.

I first had this frittata on a Qantas flight many years ago and have craved it ever since. For the longest time, I was determined to be reunited with it once again by making it at home. After much determination and experimentation, I can report back that I’ve perfected the recipe! Once you’re done making this pumpkin, spinach and feta frittata, I can guarantee that your family and friends will be talking about it for ages. If you roast your pumpkin or butternut squash the night before, it will make this vegetarian frittata quick and easy to make.

Pumpkin, Spinach & Feta Frittata Ingredients
• Kent pumpkin (sugar pumpkin or butternut squash) – 1kg (2.2lbs)
• 1 medium size onion
• 2 gloves of garlic
• 120g of spinach, washed and dried
• Extra-virgin olive oil
• 8 eggs
• ½ cup milk
• ½ tsp of salt
• ¼ tsp of black pepper
• ¼ tsp of dried rosemary
• ¼ tsp of dried thyme
• ½ block of feta (100g)
• ½ cup three-cheese blend

Spinach and Mushroom Frittata - quick and easy meal. Perfect for breakfast, lunch or brunch. The beauty of this recipe is that you can use any vegatbles that you like, any spices that you like and any cheese that you like.

Ingredients:
9 eggs
5oz (140g) baby spinach
1 cup (115g) cheddar cheese, grated
1 onion
2 garlic cloves, crushed
8 oz (225g) white button mushrooms
10-12 basil leaves
Parmesan cheese for topping (optional)
Salt to taste
1/2 teaspoon black pepper
4 tablespoons olive oil
Directions:
1. Preheat oven 410F (210C).
2. Preparation: slice onion and mushrooms, crush garlic cloves, roughly chop basil leaves.
3. In a large bowl beat the eggs, cheese, salt and pepper, set aside.
4. In a large skillet heat olive oil over medium heat, add sliced onion and sauté for 4-5 minutes, stirring occasionally until translucent. Add crushed garlic, sliced mushrooms and cook for 6-7 minutes, stirring occasionally until softened, add more olive oil if needed. Add baby spinach and cook 2-3 minutes more, stir occasionally until wilted, season with salt. Add chopped basil and stir.
5. Pour egg-cheese mixture into the skillet, cook for 4-5 minutes. Grate some Parmesan cheese on top (optional) and bake for 15 minutes or until fully cooked and golden brown on top.

A Frittata is quite similar to an omelette and originated in Italy. The word Frittata is similar to the meaning of Fried and is usually cooked in a frying pan. This recipe has roasted caramelised pumpkin that gives it its sweetness, it has the crunch of the pinenuts and the savoury saltiness from the Greek feta. It's not only an amazingly delicious meal, it's also quite healthy and vegetarian. Try one for lunch, or brunch!
