1 cup = 250 ml; Tbsp. = Tablespoon = 15 ml; tsp. = teaspoon = 5 ml
Ingredients:
2 cups Basmati Rice
4 cups Chicken Stock (boiled) [store-bought]
2 cups Onions
½ cup Green Peas
1 cup Tomato
12 Cloves
12 Cardamom Pods
2 Cinnamon Stick
½ tsp. Turmeric Powder
1 Tbsp. Ghee [clarified butter]
4 Tbsp. Cooking Oil
Salt to Taste
Serves: 6 -8
Preparation Time: 30 mins

Cashew & Raisin Rice Pilaf Recipe | How to make Rice Pilaf
INGREDIENT LIST:
1 cup white basmati rice (thoroughly washed & then soaked in water for 20 mins and then drained)
2 tablespoon cooking oil
1 cup / 135g onion - chopped
3 garlic cloves - finely chopped
1/2 inch ginger - finely chopped
1 to 2 green chilies (Deseeded) OR 1/4 teaspoon Cayenne pepper OR Indian red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala powder
1+1/2 cup /350ml water
Salt to taste (I have added 1/2 teaspoon of salt)
1/4 cup / 35g cashew nuts
1/4 cup / 35g cup raisins
METHOD:
Thoroughly wash the rice a few times until the water runs clear. This will get rid of any impurities/gunk and will give a much better/clean taste. Then soak the rice in water for 20 minutes. After 20 minutes drain the water from the rice and leave it to sit in the strainer to drain any excess water, until ready to use.
Transfer the raw cashews to a pan and dry roast it on medium heat for 2 to 3 minutes. Once roasted remove the cashews from the pan and set it aside for later use.
To the same pan add olive oil, onion, 1/4 teaspoon of salt and fry on medium heat until the onion is JUST starts brown. It takes about 5 to 6 minutes. Adding salt to the vegetables will release it's moisture and help it cook faster, so please don’t skip it. Add the finely chopped ginger, garlic, green chilis and fry on medium heat for about 1 minute or until fragrant. Then reduce the heat to low to prevent the spices from burning. Add the turmeric and garam masala. Fry for 30 seconds to a minute. Be careful not to burn the spices.
Add the soaked/strained rice, salt, water and mix well. Increase the heat to high and bring it to a vigorous boil. Once the water starts to boil, then cover the lid and reduce the heat to low. Cook on low heat for about 10 minutes or until the rice is cooked. Once the rice is cooked, uncover the lid and turn off the heat. Add chopped raisins, and roasted cashews and mix it VERY GENTLY to prevent the the rice grains from breaking. DO NOT OVER MIX THE RICE OTHERWISE IT WILL TURN MUSHY. Serve hot with your favourite curry.

Recipe: This is a easy pilaf recipe is a good one to have in your arsenal! Throw a precooked protein of your choice in there and you've got a dinner idea that comes together quickly! The best thing about this is that it's easily tailorable to your families liking! Like a little more spice, add it! Like more garlic, perfect! Like fresh veggies, you got it! And if you freeze rice for later microwave use, this one is a fantastic addition to your freezer for quick meals.

Ingredients:
2 tsp olive oil
½ diced onion
1 cup long-grain rice, uncooked
½ tsp garlic salt*
½ tsp dried basil leaves
½ tsp ground turmeric
2 cups chicken broth
1 cup frozen peas and carrots
Instructions:
Heat the oil in a skillet and add the onion. Cook for 3 minutes or until it’s almost translucent.
Add in your rice and cook, stirring until the rice is lightly toasted.
Add in your spices and stir until evenly distributed.
Add your chicken broth and bring to a boil.
Lower the heat to a simmer. Cover and cook for 10 minutes.
Add in the frozen peas and carrots and stir well (adding up to ½ cup of extra broth if the rice looks too dry– you don’t want it to burn). Cover and cook for an additional 10 minutes.
*Make your own garlic salt by combining 3 teaspoons of salt to 1 teaspoon of garlic.

Rice Pilaf the Classic Fluffy Recipe
This is the classic rice pilaf recipe I was taught as an apprentice Chef, and I believe it's still the best. The only difference, it was cooked it in the oven, but to me the stove works equally well providing you have a very low burner. Rice pilaf is one of the most versatile recipe as you can use it as a side dish to almost anything. Perfect for chicken or fish, curries, casseroles etc. Add vegetables and make it into a meal. How ever you use it, rice pilaf done this way will always be fluffy, creamy, fragrant and delicious. Enjoy pilaf rice! Please let me know in the comments how you use it.
