Although chutney originated in India, it has become a popular condiment all over the world. Similar to a relish (the terms are often interchanged), chutney is a mixture of fruit or vegetable–along with sugar, vinegar, and seasonings–that is cooked down to create a somewhat chunky but thick consistency. It can be sweet or spicy and is wonderful served with cooked chicken, beef, and pork, as well as curried food.
This pear chutney is tangy and sweet and pairs beautifully with cheese and spicy foods including (but not limited to) East Indian-style dishes. You can even turn it into an unusual spread for bagels or toast—puree a spoonful of pear chutney in a food processor with room temperature cream cheese and a dash of milk.

Pepper Relish Recipe (Both Hot Pepper Relish & Sweet Pepper Relish)
This pickled pepper relish recipe is a wonder condiment, great for preserving your abundant pepper harvest. Use this recipe method with any type of chili pepper for making hot pepper relish, sweet pepper relish, or any heat level in between to your preference.

If your garden is exploding with chili peppers like mine does every year, consider the humble pepper relish. The vinegar not only makes the relish delicious and somewhat sweet, it acts as a preservative, letting you keep your peppers around longer so you can enjoy them.
Pepper relish is easy to adjust to your own heat and flavor preferences by using any hot peppers, sweet peppers or a combination. You can add in other seasonings as well to really make it your own.
Use a good pepper relish as you would any other condiment. Top your burgers and brats right off the grill for a tangy flavor addition. Spoon it over grilled chicken or pork for an extra tasty component. Serve it at the table with brunch to scoop over toasts. You can also swirl it into soups and stews to bring on the zest. I love sweet and spicy pepper relish anytime.
Pepper Relish Recipe - How to Make Pepper Relish
Ingredients
3 cups chopped hot chili peppers – You can use a mix of peppers if you’d like anywhere from mild bells to superhots like Morugas or Scorpions, though I like to keep the thickness of the peppers about the same so the overall consistency is even. Lean toward hotter peppers. For this, I used a mix of both sweet and hot peppers.
3/4 cup white wine vinegar
1/2 cup sugar
2 cloves garlic chopped
1/2 small onion chopped
2 teaspoons yellow mustard seed
Salt to taste
Cooking Directions
Add all ingredients to a large pan and heat to medium heat. Stir until the sugar dissolves. Bring to a light boil.
Reduce heat to low and simmer about 25-30 minutes, or until liquid is reduced and absorbed into the mixture.
Add to a jar and allow to cool.
Serve!
Makes about 4 cups.

RECIPE
1 peck green pears ( 12lbs )
5 large sweet onions
5 red bell peppers
5 green bell peppers
5 jalapeño’s ( seeded ) or any hot pepper
4 cups white vinegar
5 cups sugar
Salt to taste ( I recommend 1 tab canning salt)
Chop all vegetables in food processor, (drain very well )
Add to large stock pot, with vinegar, sugar and salt.
Bring to boil and continue to boil for 15 mins, ladle in jars, water bath process 15 min for half pints, 20 min for pints

Pear Relish
Grind those vegetables and pears in the Cooking Blender.
Grind:
3 Lbs White Onions
8 Bell Peppers (Color Optional)
10 Jalapeno Peppers (With Seeds)
1/4 Cup Salt
Mix and let stand 3 hours or overnight in the fridge.
Partially or completely peel and core hard cooking pears. Fill about one-gallon jug or bowl. It takes about 25-30 pears, depending on size. You want about equal amounts to your onion/pepper mix.
Do not strain your onion/pepper mix. Add:
3 Cups White Vinegar
3 Cups Sugar
1 Teaspoon Tumeric
Mix all together and boil for 5 minutes, stirring constantly. Don't let it scorch. Put in hot sanitized jars and seal. I prefer wide-mouth jars. Makes about 16 pints.
