Greek-Style Braised Cauliflower: Kounoupidi Kapama
Get this recipe with exact measurements on my website:
Serves 4:
½ cup olive oil
1 cauliflower cut into florets
1 onion, finely chopped
2 garlic cloves, grated
1 cinnamon stick
Salt and black pepper, to taste
¼ teaspoon crushed red pepper flakes, optional
1 (16 ounces) can tomatoes, pureed
¼ cup water
Feta cheese for serving, optional
Warm the oil in a pot or wide skillet over medium heat.
Add the cauliflower florets and cook them for 8-10 minutes or until golden brown. They do not have to become golden brown on all sides.
Remove the cauliflower and set on aside on a plate.
Cook the onions in the oil for 10 minutes or until soft and golden. Add the garlic and warm through about 30 seconds taking care not to burn it.
Add the pureed tomatoes, the cauliflower, cinnamon stick, and all of the remaining seasonings and spices. Bring to a boil, cover the pot and reduce the heat to medium-low. Cook until cauliflower is tender. About 25 minutes.
Remove lid and increase the heat if necessary and cook 5 more minutes or until the sauce thickens. Taste and adjust seasoning if needed.
Serve topped with some feta cheese. Enjoy!

Tomato Braised Cauliflower with Chicken
COOKING WITH CANINES! Tomato Braised Cauliflower with Chicken.
The first video in my new video series. If you love Top Chef and dogs, your gonna love this!
I have in the past not been a fan of cooking but as a part of my healthy lifestyle I am learning to love cooking healthy dinners.
Here is the recipe as I found it on-line. I would highly recommend using an air fryer rather than an oven if you have one! And if you don't have one - go get one! My rating of this recipe can be found below along with the nutritional information.
Ingredients:
• 3 scallions, trimmed and cut into 1- inch pieces
• 4 garlic cloves, sliced thin
• ¼ teaspoon crushed red pepper flakes
• ¼ teaspoon dried oregano
• 1 ½ cups diced canned tomatoes
• 4 ½ cups cauliflower florets
• ½ teaspoon each: salt & pepper, divided
• 1 cup fresh basil, gently torn
• 1 ½ lbs boneless, skinless chicken breasts
• 1 ½ tablespoons olive oil
Directions:
1. In a sauce pan, combine scallions, garlic, crushed red pepper, oregano, tomatoes, and add about a ¼ cup of water. Bring everything to a boil, season with ¼ teaspoon of salt and pepper, and cover the pot with a lid. Gently simmer (while singing it a lullaby) for about 10 minutes, occasionally stirring, until cauliflower is tender. Season with remaining ¼ teaspoon salt and pepper.
2. Meanwhile, toss the chicken breast with olive oil and roast in oven at 450 degree F for about 20 minutes to an internal temperature of 1650F or 12-18 minutes at 380 degree F in the air fryer. Make sure it is has an internal temperature of 165 degree F before you eat it so that you don’t lose weight due to salmonella poisoning. Allow chicken to rest for 10 minutes (because it is going to be tired after everything you’ve done to it).
3. Slice chicken and serve on a bed of tomato braised cauliflower.
Yield: 4 servings
Complete Lean and Green Meal: 1 leaner, 3 green, 1 healthy fat and 2 condiments
Per Serving: 290 calories | 38 g protein | 13 g carbohydrate | 10 g fat

If you like chicken and cauliflower you will probably like this. I would say you could probably get a bit more creative than the recipe with the seasoning you add to the cauliflower while braising it. If you like things to be a bit spicy, the crushed red pepper adds a nice kick. I inhaled it...so it must not have been too bad.
Side note: I say in the video that the chicken I had there would serve as my Lean protein for the day...which is not what I meant. A little more than half of the chicken breast was the right amount and I saved the rest for a different meal on a different day.
I just love this program that helped me shed over 30 lbs and keep it off!

Cauliflower Sweet Chili Sauce
Cauliflowers are one of those veggies that find its way in almost every dish we make. It can be eaten raw, boiled, roasted, fried or even added to a soup! It is one of the most versatile veggies and also stuffed with nutritive goodness! Of course, we have all come across several spicy recipes when it comes to cauliflower. But, satisfying your sweet craving every other day ain't no crime! Especially when sweet chilli sauce becomes part of the recipe! Hence, here we are, with a simple yet delicious spicy-sweet dish!
Ingredients:
Cauliflower florets
Salt to taste
Pepper powder - 1 Tsp.
Corn flour - 2 Tbsp.
All purpose flour/Maida - 4 Tsp.
Water
Bread Crumbs
Oil for Deep Frying
Sesame seeds
For sauce
Oil - 2 Tsp.
Chopped Garlic
Chopped Ginger
Green chilli - 2 no.'s chopped
Onion - 1 no. chopped
Soy sauce - 1/2 Tsp.
Sweet chilli sauce - 1 cup
Method:
1. Boil some water in a pan.
2. Add the cauliflower florets and a bit of salt to the pan and let it cook for about a minute.
3. Now, turn off the stove and remove the florets.
4. Sprinkle some salt and pepper powder over the florets and toss them until they are properly mixed in.
5. Now, add some cornflour and maida to the florets and again, toss well.
6. Add a little water and mix well using your hands.
7. Now, take the florets, one at a time, and roll them in the breadcrumbs until they are completely coated.
8. Deep fry the coated florets in some hot oil.
9. Now, add some oil to a pan. Add the garlic, ginger and green chilli to the pan. Saute well.
10. Now, add the chopped onions and mix well.
11. Once the onions turn transparent, add the soy sauce and sweet chilli sauce. Mix well.
12. Now, add the fried cauliflower florets to the pan. Mix well until the florets are properly coated.
13. Garnish with some sesame seeds.
14. Voila! Cauliflower Sweet Chilli Sauce is ready! You can have it as a snack or as a side to your meal! Serve hot!

This amazing dish is super easy to make and super healthy. Try it out and let me know how it came out.
Ingredients:
- 1 medium sized cauliflower
- Salt & pepper
- Moroccan dry spice (any spice will work)
- 1 onion
- Cumin powder
- Garlic powder
- Avocado oil
- Basil
- Lemon OR lime
- Vegetable broth
Steps:
1. Cut the stem off of your cauliflower
2. In a bowl, put in 1 tablespoon of cumin powder
3. Mix with 3 tablespoons of Moroccan dry spice
4. Add 1 tablespoon of garlic powder
5. Add 1 teaspoon of black pepper and 1 teaspoon of salt
6. Mix well
7. Rub it in the cauliflower evenly
8. Add 3 tablespoons of avocado oil to a cast iron pan
9. Heat on medium heat and drop the cauliflower gently
10. Cook on medium heat for 3 minutes
11. Flip the cauliflower and cook for 3 more minutes
12. Remove the cauliflower from the pan when done
13. Cut your onion into small pieces
14. Add to pan and cook on medium heat
15. Shred a few garlic pieces and add to pan
16. Mix well
17. Add a cup of vegetable broth
18. Mix well and cook for 3 minutes
19. Squeeze some lemon juice
20. Mix well and cook on medium heat
21. Add some salt & pepper
22. Turn off stove when done, and gently put cauliflower in cast iron pan
23. Add 1 tablespoon of dry basil
24. Toss the broth on top of the cauliflower
25. Cover the pan with aluminum foil
26. Set oven for 320 F and bake for 30 minutes
27. You can broil on low for 3 minutes
28. Once done, serve along as a side and enjoy!
