How To make Speedy Crabmeat Imperial
2 T Butter
1/4 c Chopped onion
1/4 c Chopped green pepper
1 2oz. jar pimento
3 T All-pur flour
2 t Dry mustard
1/4 t Salt
1/4 t White pepper
1 Dash of tabasco
1 c Milk
3 T Chablis
1 lb Fresh lump crabmeat
Combine first three ingredients in a 1 1/2 qt. casserole. Microwave on high, uncovered, 2 minutes. Stir in pimiento and next 5 ingredients, stirring until smooth. Gradually add milk and Chablis, stirring well. Microwave at High, uncovered, 3-4 minutes or until bubbly, stirring after 2 minutes. Stir in crabmeat. Spoon mixture evenly into 6 baking shells. Arrange shells on a 12-inch glass pizza plate. Cover with waxed paper, and microwave on high 3-4 minutes or until thoroughly heated. Garnish, if desired with pimiento strips.

Cajun Crab Imperial
Cajun Crab Imperial, Chef Frank shows you how to make this spicy blue crab specialty entrée. This is a spicy twist on the classic crab entree.
INGREDIENTS
1 lb. blue crab meat
1/3 cup finely chopped yellow onion
1/3 cup finely chopped bell pepper
1/3 cup finely chopped celery
1/3 cup chopped scallions
1 cup mayo
2 tsp seafood magic
2 tsp brown mustard
1 tsp Worcestershire
1/2 tsp paprika
2 tbsp butter
1 tbsp hot sauce
Recipe
1. Sauté onion, peppers. scallions and celery in butter til caramelized. Refrigerate
2. Combine mayo, seafood magic, mustard, hot sauce and veggies.
3. Add parsley to crab meat. Add Cajun mix a little at a time.
4. Drop mixture into casserole dish. Don’t pack tightly.
5. Top with a bit more of the Cajun crab mix.
6. Sprinkle with paprika.
7 Bake for 12 minutes at 400 or until heated throughout.
