6 tb Butter or margarine 1 1/2 c Plain flour 1 sm Egg 1/3 c Brown sugar 1 pn Ground cloves 1 pn Cardamom 1 ts Cinnamon Rub the butter into the flour. Cream the egg with the sugar and add to the flour and butter mixture. Add the spices and mix together gently. cut into shapes and put on to a greased baking tray. Bake at 350 for 10 minutes or until golden brown. Cool and store in an airight container. The biscuits cookies will keep for several weeks. Pat Dwigans -----

BETH’S HOLIDAY SHORTBREAD COOKIE RECIPE Makes 9 cookies *PRINT RECIPE HERE*
INGREDIENTS: ¾ cup (180 g) butter ½ cup (50 g) powdered sugar 1 tsp (5 ml) vanilla ¼ tsp (1.25 ml) salt 2 tsp (10 ml) orange zest 1 ½ (180g) cups flour

METHOD: Whip butter until fluffy, add sugar, beat to combine. Add vanilla, salt and orange zest. Beat together. Add flour. Beat until really well combined.
Roll into ball. Wrap in parchment or plastic. Refrigerate 1 hour.
Press into pan. Prick with a fork.
Bake at 325F (175C) 25-27 mins. Allow to cool for 15 mins.
Place cutting board on top of pan and flip over. Cut shortbread into squares while still warm.

Hello everyone! This is my favorite gingerbread recipe. The cookies are soft and very aromatic. Keeps soft for a long time when stored in a closed container.
1. Put honey, sugar, and spices in a saucepan. Bring to a boil, stirring occasionally. 2. Remove from heat and add baking soda, stir (the mixture will foam and increase). 3. Add butter gradually and stir. Add egg and stir. 4. Add sifted flour and knead the dough (I took a hand mixer with hook attachments). Form a ball. 5. Roll out the dough 5mm thick between two sheets of parchment or silicone mats. Put in the refrigerator for 30 minutes-1 an hour. 6. Cut out the cookies and transfer them to a baking sheet covered with parchment paper. 7. Bake at 350F/175C for 10 minutes.

These deliciously spiced cookies are crunchy and perfect at Christmas time. Ever popular in The Netherlands and Belgium(speculoos) they taste so good. Although traditionally made in moulds they can easily be created using cookie cutters.
