How To make Spatzli(Egg Noodles)
3 c Flour
Unbleached
1 t Salt
1/4 ts Nutmeg (optional)
4 Eggs :
Large, Beaten
1/2 c (or more) Water
1/4 c Butter
Sift flour, salt and nutmeg together in a bowl. Pour eggs and 1/4 cup water into middle of flour mixture, beat with a wooden spoon. Add enough water to make the dough slightly sticky, yet keeping it elastic and stiff. Using a spaetzle machine or a colander with medium holes, press the noodles into a large pot full of boiling salted water. Cook noodles in the water about 5 minutes or until they rise to the surface. Lift noodles out and drain on paper towels. Brown noodles in melted butter over low heat, and serve with a main dish. Or, don't bother browning them, and serve in/with soup, or with stew. (Another method for shaping the noodles is to spread the mixture on a wooden board and cut off little pieces, dropping them in the boiling water and fishing them out quickly when they're done.) (Be prepared to write off your first few attempts at spaetzle, by the way. They are very labor-intensive, and a little miscalculation with the time in the hot water can ruin them. One joke I heard about them while in Switzerland: Man in restaurant to chef -- "These spaetzli are terrible!" Chef: "How dare you! I've been making them since before you were born!" Man: "Yes, but did you have to leave them in the water that long?!")

Homemade German Spaetzle: the delicious egg noodle to try!
INGREDIENTS
• 1/2 flour
• 1 egg
• ½ tsp kosher salt
• Cayenne
• 1 tbsp yogurt
• 3 tbsp milk
• Butter
• Parsley
• Sage
METHOD
Pour the flour into a bowl, add egg, salt, cayenne, yogurt, milk and mix until you get a thick mixture.
Use a grater to pass the mixture through the holes and directly into boiling water to get cooked bits of the mixture.
Melt butter, add the cooked pieces and mix.
Add chopped parsley and sage to serve.

German Spätzle Recipe | How to make Spaetzle
In this video I will show you how to make spaetzle the original way (which is with a wooden board), or with a Spaetzle Press. This is the original german spätzle recipe my mom and grandma used every week to make these delicious noodles. I grew up in Stuttgart Germany and had those at least once a week for dinner. I will leave links down below as well if you like to know where to find the Spatzle Board and the Spaetzle Press. The dough is really easy to make and ready within minutes.
Another very popular recipe is Käse Spätzle (Cheese Spaetzle).
All you do is dice 1/2 of an onion. Cook them in a pan with butter until nicely browned and soft. Add Spätzle and cook together for about 3 minutes. Add at least 1 1/2 cup of your favorite cheese and stir until completely melted and mixed with the Spatzle.
Garnish with some parsley on top

Spaetzle are egg pasta made from fresh eggs with an irregular shape and a rough, porous surface, in which the tough dough is poured directly into boiling water / steam - whereby their shape varies between thin and thick, oblong and short. They are the only pasta products that are cooked during production. In the classic method of production, a spaetzle board is used and the moist dough is scraped into the cooking water.
