Un primo piatto veloce per veri amanti dell'aglio!
La pasta alla carrettiera combina un mix di ingredienti semplici e li avvolge alla perfezione con quella speciale cremina che al solo pensiero fa partire l'acquolina.
Prezzemolo, peperoncino, olio extravergine di oliva buono e… aglio che in questa ricetta non può assolutamente mancare per cui, patti chiari fin da subito, se ti piace alla follia, come a me del resto, devi assolutamente provarli… si fanno in 20 minuti, nel tempo in cui l'acqua bolle e gli spaghetti si cuociono. Poi però non devi vedere nessuno eh!

320 g. di spaghetti grossi
120 g. di pecorino grattugiato
1 spicchio di aglio
1 mazzetto di prezzemolo
1 peperoncino fresco
q.b. olio extravergine di oliva

Spaghetti alla Carrettiera recipe is the Sicily’s version of the classic Aglio, Olio e Peperoncino dish-mainly because almost all the ingredients are identical, but it has a few twists that make it stand apart and the way it is prepared might just surprise you.
What is most interesting is that the “sauce” accompanying this pasta made with extra virgin olive oil, chili pepper and garlic is used as more of a dressing on the hot pasta that has been freshly cooked, so it is tossed through raw and then served up with a sprinkling of grated toasted breadcrumbs.
The addition of grated Pecorino cheese also can’t be missed. Obviously.

Spaghetti Alla Carrettiera
Ingredients:
* 1 pound pasta (spaghetti or your preferred type)
* 2 tablespoons olive oil
* 3 cloves garlic, minced
* 1/2 teaspoon red pepper flakes (adjust to taste)
* 1 pound cherry tomatoes, halved
* Salt and black pepper to taste
* Fresh basil leaves
* Grated Pecorino Romano or Parmesan cheese (optional)
Instructions:
* Cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve about 1/2 cup of pasta cooking water before draining.
* In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1-2 minutes until the garlic becomes fragrant.
* Add the cherry tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.
* Season the tomato mixture with salt and black pepper to taste. Add basil.
* Once the pasta is cooked, add it to the skillet with the tomato mixture. Toss everything together, adding a bit of the reserved pasta cooking water to create a light sauce that coats the pasta evenly.

SPAGHETTI ALLA CARRETTIERA - DELICIOUS SICILIAN PASTA
Spaghetti alla carrettiera is a classical Sicilian pasta dish.
It is made out of very simple ingredients and requires minutes to prepare.
Ingredients:
Spaghetti 250 gr.
Chilli pepper deseeded 1
Grated Pecorino cheese 50 gr (2 oz)
EV Olive Oil 4 tbsp - 2 tbsp for the sauce + 1 tbsp for the breadcrumbs + 1 extra
Lemon juice 1 or 2 tbsp
Breadcrumbs 3 tbsp
Chopped Parsley 4 tbsp
Garlic 3 cloves
Tomato 1
Sea salt
The first thing to do is to prepare the secret ingredients “Muddica atturrata” toasted breadcrumbs. You put the breadcrumbs in a non-stick saucepan and on medium heat toast them until they turn golden brown. Toss them to avoid burning. Set aside in a dish for a moment, in the meantime remove the residual crumbs from the pan, pour in the olive oil and add a clove of garlic, cook on low heat allow the garlic to sizzle for a minute then add the toasted breadcrumbs and toss them in the olive oil mixing them with a wooden spoon for a couple of minutes making sure they do not burn. Now set aside in a dish.
Put a pasta saucepan with water and salt on the stove and while it reaches the boiling point we can prepare the sauce.
Pour 2 tbsp of olive oil in a bowl big enough to add the pasta later. Add 3 tbsp of parsley, 2 cloves of garlic chopped, 1 fresh chilli chopped, 1 or 2 tsp of lemon juice, a pinch of salt.
Stir with a wooden spoon and let it rest and infuse.
Cut the tomato in small chunks and keep them separate.
When the water is boiling add the spaghetti and cook it for the prescribed time, making sure you stir them in the pot every so and so to stop them sticking.
When ready drain them but save some pasta water ( I remove the spaghetti from the pot with thongs - I don't use a colander)
Add the spaghetti to the bowl with the sauce you have prepared. Add ¾ of the pecorino, 2 to 3 tbsp of pasta water, some more olive oil, toss and serve them in a pasta bowl. Add on the top the rest of the pecorino cheese, a tbsp (or more) of toasted breadcrumbs, parsley and the chopped tomato.
