I've been experimenting with different recipes, from grilling soy tofu to adding it to stews, omelets, and even pasta dishes.
Now, let me give you a few tips and tricks for perfecting your soy puree burgers. Make sure the soybean puree is completely dry by removing all the extra milk. You can store it in the refrigerator for a couple of days. To give the burger a nice sticky texture, boil the potatoes before adding them. Any flour with good stickiness will work, but I highly recommend chickpea flour for its delicious taste. Don't forget to use aromatic spices to elevate the flavors. If you prefer, you can also bake the burgers instead of frying them.

????One medium onion

????One pint of chickpea flour
????Salt, black pepper, coriander seeds, flax powder, turmeric, mint
Vegan soy bean burgers - chicken & beef style
These are two delicious Vegan Soy Bean Burger recipes - Chicken style and Beef style. They are made using whole cooked soy beans - no TVP in sight!
Soy Bean Burger – Chicken Style
1 cup cooked brown rice (short grain or risotto rice is best)
1 1/2 cup cooked soy beans (or 1 tin)
1 cup fried onions + white button mushrooms (about 1/2 large onion and 150g mushrooms)
1/2 cup rice or besan flour (or use split pea flour)
1/4 cup nut/seed butter
2 Tbsp cornflour, potato or tapioca starch
2 Tbsp white miso paste (or add 1 Tbsp maple syrup for sweetness)
2 Tbsp nutritional yeast flakes (or can add 1 tsp marmite)
1 Tbsp vegan chicken seasoning
1 tsp onion powder
1 tsp garlic powder
1 tsp salt (or more to taste)
1 tsp Dijon mustard
1/2 tsp liquid smoke
1/2 tsp white pepper

Soy Bean Burger – Beef Style

1 grated carrot
1 small roasted or boiled beetroot
1/2 cup rice or besan flour (or use split pea flour)
1/4 cup nut/seed butter
2 Tbsp tomato paste
2 Tbsp cornflour, potato or tapioca starch
1 Tbsp miso paste
1 Tbsp molasses
1 Tbsp soy sauce
1 Tbsp dried mushroom powder (porcini or shiitake)
1 Tbsp milled chia/flax seeds or psylium husk
2 tsp smoked paprika
1 tsp mixed Italian herbs
1 tsp onion powder
1 tsp garlic powder
1 tsp salt (or more to taste)
1 tsp Dijon mustard
1/2 tsp black pepper
1/2 tsp cumin powder
1/4 to 1/2 tsp chilli powder/flakes if you like your burgers spicy (optional)
Bake burgers at 200 degrees Celcius for 35 minutes, flip after 25 minutes.
