How To make Southwestern Soup
2 tb Canola oil
2/3 c Chopped yellow onion
1 Garlic clove
minced
1 t Ground cumin
1 tb Fresh oregano :
minced
1 sm Jalapeno pepper core seed
Mince 1 md Red bell pepper :
core seed
Mince 1 qt Vegetable broth
1 c Corn kernels cooked
1/4 c Fresh lime juice
2 c Cooked white beans :
Drained and rinsed 1 c Tomatoes peel seed chop
1 md Avocado :
see note
3 tb Fresh cilantro minced
Salt and pepper 4 6 inch corn tortillas :
cut
-into 1/2" strips
Note on Avocado: peel, pit, chop and toss with a little lime juice. Heat 1 tablespoon of the oil over medium heat in a large heavy pot. Add the onion, garlic, cumin, oregano, jalapeno, and bell pepper and cook, stirring, until the onion is transparent, 6 to 8 minutes. Add the broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes. Add the corn, lime juice, and beans and bring back to a simmer. Add the tomatoes, avocado, and cilantro and remove from the heat. Season with salt and pepper. While the soup is simmering, heat the remaining oil in a nonstick skillet over medium-high heat, then fry the tortilla strips until crisp, about 3 to 5 minutes. This black bean soup is a vegetarian soup recipe that's humble yet dazzling. It's layered with savory and spicy flavors, and can be made in about 30 minutes.
Black bean soup is a staple recipe in many countries around the world. There are versions from Mexico, Spain, Puerto Rico, and other countries in the Caribbean and Latin America. My recipe is heavily influenced by traditional Cuban black bean soup recipes, but of course, I've tweaked it a bit to my liking!

Southwestern soup, how to make/ Twisted Mikes
This is an easy crockpot southwestern soup. Brown your meat and onion and throw everything into a crockpot. We at twisted Mikes love soup, especially on a cold day.
Southwest Chicken Soup | Southwest Chicken Soup Recipe | MOLCS Easy Recipes
Southwest Chicken Soup
1 Rotisserie Chicken
8 C Water or Chicken Stock
1 C Onion - chopped
4 Cloves Garlic - minced
1 Can Black Beans - rinsed & drained
1 Can Corn - drained
1 16 oz Jar Salsa (I use medium heat)
1/2 tsp Cumin
1 tsp Mexican Oregano
1 Chipotle Pepper w/Adobo- minced (if you want it spicier add 1-1/2 - 2)
1/4 C Cilantro - chopped
6 Corn Tortilla - toasted and diced
To make homemade stock
Place chicken in pot an cover with water, bring to a boil. Lower heat to low and simmer 1 hour. Remove chicken and let cool.
Once cool enough to handle shred chicken and set aside.
In separate pot drizzle with olive oil, add onions, cook until translucent, approx 5-6 mins. add cumin & oregano and garlic, stir until well combined. Add in black beans, corn, salsa & cilantro, stir. Add stock and chipotle pepper with adobo. Cover and let simmer.
In the meantime toast tortillas in a pan and dice. Add to pot and stir, add shredded chicken back to pot and simmer for about 30 more minutes.

Looking for a good soup recipe to keep you warm and full in the winter? Then try your hand at this Southwest Chicken Soup recipe for dinner! This southwestern chicken soup is loaded with tender beans, chicken, and vegetables for a filling meal.
Ingredients:
2 tsp vegetable oil
1 ½ lb chicken breast, boneless & skinless, cut into 1-inch pieces
8 oz red bell peppers, chopped
5 ½ oz red onions, chopped
¾ cup green beans (cut into ¼ pieces)
4 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1 tsp chili flakes
6 cups chicken broth
15 oz (1 can) black beans, drained
14 oz (1 can) tomatoes, diced or crushed
2 cups spinach
1 ½ cups corn kernels
3 tbsp lime juice
Serve with:
Monterey Jack Cheese, shredded
Cilantro, fresh
⬇️ How to make Easy Southwest Chicken Soup ⬇️
0:10 In a saucepan, add the vegetable oil. Set it over medium-high heat
0:15 Add the chicken breast. Sauté for 3-5 minutes, stirring occasionally
0:24 Drain on a plate with paper towels
0:30 Add the red bell peppers, red onions, green beans & garlic in the saucepan.
0:41 Reduce heat to medium. Sauté for 6-8 minutes
0:46 Add chili powder, ground cumin & chili flakes. Roast briefly.
0:57 Add the chicken broth, black beans & tomatoes. Bring to a boil then reduce the heat. Simmer for 15 minutes, stirring occasionally.
1:19 Add the cooked chicken, spinach & corn kernels. Stir to combine.
1:37 Simmer for an additional 15 minutes
1:40 Add the lime juice
1:43 Season with salt & ground pepper to taste. Adjust accordingly.
1:54 Serve with Monterey Jack Cheese & cilantro
