3 pounds boneless beef sirloin
chili grind
2 cups onion :
minced
1 tablespoon garlic -- minced
1/2 cup peanut oil
15 ounces tomato sauce
1/2 cup hot chile powder
15 ounces low sodium beef broth
1 tablespoon New Mexico chile powder
1 tablespoon pasilla chile powder
1 tablespoon ground cumin
1 tablespoon vinegar
1 teaspoon oregano
1 teaspoon pepper
1/2 teaspoon cayenne
1/2 teaspoon tabasco sauce
COMBINE BEEF, ONIONS, AND GARLIC-MIX WELL HEAT 3 TABLESPOONS OIL IN A DUTCH OVEN, OVER A HIGH FLAME ADD ONE-THIRD OF THE MEAT MIXTURE AND brOWN WELL REMOVE FROM PAN, AND SET ASIDE REPEAT WITH REMAINING OIL AND MEAT COMBINE brOWNED BEEF MIXTURE WITH REMAINING INGREDIENTS IN DUTCH OVEN, OVER A M ODERATE FLAME brING TO A BOIL, REDUCE HEAT, COVER, AND SIMMER FOR 2 HOURS SERVE HOT

2 lbs. Ground hamburger
2 cups Dried pinto beans (*Prepared)
50 oz. Tomato sauce
32 oz. Stewed tomatoes

2 cups Roasted Hatch green chilies
1 medium Sweet onions (divided)
1 Green bell pepper
3 stalks/ribs Celery
2 TBS Minced garlic (divided)

1/4 cup Dried Pasilla chili powder (Video/Recipe
1 TBS Onion powder
1 tsp Cumin powder
1 tsp Spanish paprika powder
1/2 tsp Chipotle powder
1 tsp Salt (divided)
grind pepper to taste

*Prepared Pinto Beans:
The night before place 2 cups dried pinto beans in a soup pot or other container and soak overnight until plumped up. Drain water and rinse well.
**Time Saving Tip: Precook pinto beans in an Instant Pot then, reduce stove top cooking time to 30min.
Brown hamburger in a skillet with 1/2 onion and 1 TBS garlic, 1/2 tsp salt and pepper to taste. When fully cooked drain fat and set aside. In a 8qt soup pot add all ingredients with the rest of the onion, salt, and garlic. Bring to a gentle boil, reduce heat and simmer on med-low for 1 1/2 hour or until beans are tender. Stir occasionally to prevent sticking or burning.
Serve with sharp cheddar cheese, sour cream, and sliced green onion.
Store unused portions in refrigerator.
***Note: Chili is better the second day! So, make a lot!
