Spicy Southwestern-Style Turkey Burgers
Servings: 4
INGREDIENTS
Patties
1 pound ground turkey
⅓ cup red onion, minced
1 jalapeño pepper, minced
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon cayenne pepper
1½ teaspoons cumin
1 teaspoon smoked paprika
2 tablespoons vegetable oil (for cooking)
Toppings
Sesame seed bun
Shredded lettuce
Sliced tomato
Pepper Jack cheese
Avocado
Chipotle Mayo
½ cup mayonnaise
2 tablespoons canned chilies in adobo
½ lime, juiced
PREPARATION
Place turkey, onion, jalapeño, and spices together in a large bowl and mix together until all the ingredients are incorporated.
Lightly wet your hands and use them to shape 4 circular patties about 4 inches in diameter.
Heat up about 2 tablespoons of vegetable oil in a pan over medium heat.
Cook burgers for 2 minutes on the first side, then flip, lower heat to low, and cook them for an additional 5-6 minutes. NOTE: the turkey burgers must be cooked through. Use a meat thermometer to check each pattie for an internal temperature of at least 165˚F before removing from pan.
Assemble the burgers as desired with bun, lettuce, tomato, cheese, and preferred condiments.

(Cooked in a #9 Skillet)
Burger Ingredients:
1 lb ground turkey
1/4 cup bread crumbs
1/4 cup milk
1/4 cup salsa
1 tsp chili powder
1 tsp cumin
1/4 tsp garlic salt
1/4 tsp black pepper
4 slices pepper jack cheese
4 hamburger buns
Salsa Mayonnaise Ingredients:
1/4 cup mayonnaise
1/4 cup salsa
1/4 tsp chili powder
Guacamole Ingredients:
2 mashed avocados, which have been peeled & pitted
1 small tomato, chopped
1/4 cup finely chopped white onion
2 cloves finely chopped garlic
juice from 1/2 lemon, squeezed
dash of garlic salt
dash of black pepper
dash of chili powder
Directions:
In a large bowl, combine turkey, bread crumbs, milk, slasa and dry seasnings to form 4 patties.
Cook patties for 3 minutes, flip and place cheese slice on top of patties and cook an additional 3 minutes over medium high heat in a cast iron skillet.
Mix mayonnaise ingredients to make topping.
Mix guacamole ingredients to make topping.
Place toppings & burger on toasted bun and ENJOY!!!

INGREDIENTS:
1-1/2 cups {lightly packed} cooked Brown Rice
1 15 oz. can {or about 1-1/2 cups soaked and cooked} Black Beans, rinsed and reserving 1/4 cup
1 tablespoon of Olive Oil, plus more for cooking
1 small Yellow Onion, diced small {about 3/4 cup}
1/4 cup diced Green Bell Pepper
1/4 cup diced Red Bell Pepper
2 cloves of Fresh Garlic, minced
3/4 cup thawed {or fresh} Sweet Corn
1-1/4 teaspoon Kosher Salt
1 teaspoon Cumin
1/2 teaspoon Chili Powder
1 or 2 pinches of Cayenne Pepper
1/3 cup Bread Crumbs
1 whole Egg, lightly beaten
OPTIONAL BURGER TOPPINGS:
Sliced Fresh Tomato
Sliced Fresh Avocado
Sliced Red Onion
Crisp Lettuce
Cilantro Leaves
Salsa
DIRECTIONS:
In a 10-inch skillet add in the tablespoon of olive oil.
Sautee the onions and peppers over medium low heat until they are soft and the onions are translucent. Add in the minced fresh garlic and cook for one minute.
Add in the 3/4 cup of thawed {or fresh} sweet corn kernels and the 1/4 cup of reserved black beans. Season with salt, chili powder, cumin and cayenne pepper. Stir and remove off of the heat to cool slightly.
Into a large bowl add the remaining black beans. Smash the black beans until mostly smooth and add in the cup and a half of cooked brown rice.
Add in the cooled peppers and onion mixture, the third cup of bread crumbs and stir to combine. Add in the beaten egg and stir once more to combine.
Form into 8 patties, forming them well so they hold together when cooking.
Heat a griddle to 375 degrees or a skillet over medium heat. Lightly coat with more olive oil. Once hot, place the veggie patties {I worked in batches of four} and cook for 6-8 minutes a side. Flip {ever-so-carefully so you don't break the burgers} once a golden crust forms on the bottom and repeat for 6-8 more minutes.
Serve on or off a bun with as many toppings as you desire.
