Pressure Canning Chicken Vegetable Soup
I am canning homemade chicken vegetable soup and what could be better on a cold day! There is something about chicken soup that seems to help heal the body when you have a cold or just not feeling well. I canned this in quart jars and when I get a jar from the pantry, heat it up, and when it is simmering I add egg noodles and have Chicken noodle soup!

The ingredients I used:
Carrots 1/2 cup
Celery 1/2 cup
onion...less than a 1/4 cup
Minced Garlic 1 tsp
Chicken 1 cup
Add product to jars and then add Chicken broth (homemade or store-bought) - Fill to 1-inch headspace.
Always remember to use a towel with vinegar and wipe off the rims of the jars. Place lids and rings on jars and tighten finger snug.
At my altitude, for quart jars, I process at 10lb psi for 90 minutes (1 hr. and 30 minutes.
After processing let cool until pressure is 0. Remove and place on a towel on the counter and let cool for 12 to 15 hours. After they cool make sure jars have sealed, removed rings wipe off jars, date and place in pantry.
NOTE: (if the product you put into the jars is hot make sure the jars are hot before placing the product in the jars. If the product is cool make sure the jars are cool too. And the same goes with placing the jars in the pressure canner. If the jars are cool make sure the water is cool in the canner and place the jars in. If jars are hot make sure water is hot in the canner before placing jars in the canner). Hot-hitting cold or cold hitting hot can break the jars.

3 boneless skinless chicken breast (cooked and shredded or cubed)

2 cups celery
6 cups tomatoes (diced)
4 to 6 jalapeños (optional)
2 cans kidney beans 15oz each
