How To make South Of The Border Eggplant
4 sl Raw bacon
1 md Onion, finely chopped
1 lb Lean ground beef round
1 Clove garlic, peeled and
-crushed 1 md Green pepper, finely chopped
1 md Eggplant, peeled and cut
-into 1/2-inch slices 1 t Salt
1/8 t Pepper
15 oz Can tomato sauce
1/2 c Crumbled feta cheese
1 c Seasoned croutons
1. In a deep, 2-quart, heat-resistant, non-metallic casserole heat bacon,
covered with paper toweling, 4 minutes or until crisp. Reserve bacon fat. 2. Remove bacon. Set aside.
3. Add beef, onion, garlic and green pepper to reserved bacon fat. Heat,
uncovered, 6 1/2 minutes or until vegetables are tender and beef is browned. 4. Add eggplant, salt, pepper, tomato sauce, feta cheese and reserved
bacon. Stir to blend. 5. Heat, covered, in Microwave Oven 8 minutes or until eggplant is tender.
6. Sprinkle with croutons and heat, uncovered, an additional 1 minute or
until heated through.

Begun Pur | Spiced Fried Eggplant | Pan Fried Aubergine | Easy Brinjal Recipe
Known by many names in different parts of the world e.g. Brinjal, Aubergine or Eggplant (scientific name Solanum melongena) is one of the common vegetable in India and South-East Asia. It is native to South Asia and domesticated in India. Hence it is little wonder that references to this vegetable is found in ancient texts. The plant is thorny and the flowers are light purple in colour. The vegetable brinjal is the fruit which is glossy dark or light purple or at times white in colour, soft meaty in consistency. The cut surface which quickly turns grey because of oxidation shows the berry like seeds. In Bengal there are 400 different cultivars of brinjals available and they go by different names, e.g. the white variety is known as muktokeshi (মুক্তোকেশী বেগুন), the small variety is called doko begun (দোকো বেগুন) , the large round ones tal begun (তাল বেগুন) and the thin elongated variety is called kuli begun (কুলি বেগুন).
Some people, especially in Asia have been found to be allergic to brinjal. The exact causative agent in not very clearly known, however it seems the allergen is mostly in the skin of the brinjal. And they are unfortunate to not enjoy this a very common delicacy.
