PREPPER PANTRY - Canning South of the Border Chicken Soup - A delicious southwestern chicken soup!
This delicious South of the Border Chicken Soup recipe is from the Amish Canning Cookbook. I LOVE having this in my pantry for a delicious, go-to lunch. My favorite way to enjoy it is with a dollop of sour cream on top, some chopped cilantro, and some fried tortilla strips – either homemade (see my video for making homemade tortilla chips here or store-bought (I typically find them in the same section as croutons at Walmart.
????????♀️ If you don't want to can this soup, just make a big pot and your whole family can enjoy it for a couple of meals, or half the recipe and have it for just one meal! ✅
INGREDIENTS
3 cooked chicken breasts (diced or shredded)
6 cups diced tomatoes
2 cans kidney beans (I use 2 pints of my home canned kidney beans)
3 cups corn (fresh, canned & drained, or frozen)
2 cups chopped celery
1 1/2 cups chopped carrots
4 - 6 diced jalapeños (I am using about 1/2 cup diced pickled jalapeños)
1 Tbsp salt
1 Tbsp minced garlic
1 tsp cumin
12 cups chicken broth
Process pints 75 minutes and quarts for 90 minutes. Please visit the National Center for Home Food Preservation ( to determine your correct canning pressure. I live at sea level so my canning pressure is 11psi.
To make fried tortilla strips, follow the same steps that I do here ( for tortilla chips, only cut them in strips – or you can just make the chips and then crumble them. That's almost the same thing!

3 boneless skinless chicken breast (cooked and shredded or cubed)
1 1/2 cups carrots
2 cups celery
6 cups tomatoes (diced)
4 to 6 jalapeños (optional)
2 cans kidney beans 15oz each
12 cups chicken broth
3 cups corn (fresh or frozen)
1 tsp cumin
1 TBSP salt
3 cloves garlic (minced)

Warm up your winter with this quick and easy Chicken Tortilla Soup recipe that's safe for canning. To thicken upon opening, stir 1 T. of cornmeal or masa into a bit of water then add to soup before heating. Bring to a simmer. Add tortilla strips (fresh or fried) and your favorite toppings and enjoy!

12 c. stock, Chicken or Roasted Corn
Chicken Stock:
Roasted Corn Stock:
2 pints of Chipotle Black Beans or 2 15oz. cans of black beans
Chipotle Black Beans:
6 c. chopped tomatoes, fresh or canned
Canning Tomatoes:
3 c. corn, fresh or frozen
1 large onion, chopped
1 jalapeno, chopped
1 poblano pepper, chopped
1 T. each dried Cilantro, Mexican Oregano and Seasoned Salt
2 t. each Garlic powder, Smoked Paprika and Cumin
Fill hot jars with hot soup to 1 headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:

1,001-2,000 ft 15 11
2,001-4,000 ft 15 12
4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.
