8 ounces boneless, skinless snapper fillets
cut in small
dice bay leaf 1 teaspoon creole seasoning
1 teaspoon basil leaves :
roughly chopped
1 teaspoon cilantro leaves chopped
1 teaspoon salt
1 tablespoon japanese bread crumbs*
2 teaspoons Dijon mustard
1 teaspoon fresh lime juice
1 teaspoon garlic :
chopped
1 teaspoon red bell pepper
1 egg plus 1 egg yolk
1 tablespoon green onion chopped
1 tablespoon clarified butter** :
(up to 2)

*Available at Japanese and some Asian markets.
Blanch snapper with bay leaf about 30 seconds in boiling water to cover. Combine Creole seasoning, basil, cilantro, salt and bread crumbs in large mixing bowl. Add mustard, lime juice, garlic, bell pepper, egg, egg yolk and green onion. Add snapper and mix; form into 16 (2-ounce) cakes and saut

oven broiled red snapper | recipe
3 lbs red snapper filets
2 stalks scallions
3 stalks thyme
hand full of cilantro
1/4 of a medium onion
6 cloves garlic
4 slices ginger
1 habernero pepper
2 tbsp oil 1 tbsp lemon juice
2 tsp old bay
1 tsp seasoned salt
1 tsp complete seasoning
1/2 tsp black pepper
sauce
1 stick butter = 1/2 cup
1/2 cup heavy cream
1/2 cup chicken broth or white wine
1/4 tsp old bay
1/2 tsp lemon pepper Seasoning
1 tsp garlic powder

OLD SCHOOL BLACKENED SNAPPER/SPICY LINGUINE PASTA POMODORO (T.G.I.F. FISH SEGMENT OF THE WEEK)
This is a dish that l grew up cooking and eating
It’s a simple recipe for the pasta sauce
Everything else is cooked according to your taste
RECIPE( for sauce)
1 # linguine pasta
1/3 cup heavy cream
1/4 cup freshly grated parmesan cheese
1 tbsp. diced garlic(optional)
1 large jar marinara sauce( your choice)(i use raos)
2 tablespoons sambal ( Asian chili sauce)( or siracha)
1# flounder or red fish blackened( your choice of blackened seasoning() I use thick meat ) uncle steves shake
FOR THE SAUCE:
Add marinara to large sauce pan
bring to a simmer, add heavy cream and cheese and let simmer 5-7 minutes until slightly thickened
Add cooked pasta to sauce and add chopped parsley for garnish
place pasta in dish and
top with blackened fish and enjoy with toasted garlic bread
