Duck Breast with Apricot Chutney
Serves 6
Ingredients:
CHUTNEY
3/4 cup orange juice
1/3 cup sugar
1 (6-oz.) pkg. dried apricots, chopped
1/4 cup dried cherries
1/4 cup golden raisins
1 tsp. minced fresh gingerroot
1/4 tsp. ground coriander
1/4 tsp. ground cumin
1/8 tsp. salt
1/8 tsp. pepper
Dash ground cloves
1 tsp. lemon juice
DUCK
6 (5-oz.) duck breast halves with skin
3/4 tsp. salt
1/8 tsp. pepper
1 Tbsp. olive oil
ORANGE SAUCE
1/8 tsp. minced garlic
1/4 cup Marsala wine
1/4 tsp. cornstarch
1/4 cup orange juice
3 Tbsp. chicken broth
1 Tbsp. grated orange zest
4 1/2 tsp. cold butter
1 1/2 tsp. minced fresh basil
Directions:
1. For chutney, in a saucepan, combine orange juice and sugar. Cook and stir over medium heat until sugar is dissolved, about 3 minutes. Add apricots, cherries, raisins, ginger, coriander, cumin, salt, pepper, and cloves. Bring to a boil. Reduce heat to low; cook until apricots are tender, about 10 minutes. Transfer to a bowl; stir in lemon juice. Let stand for at least 2 hours.
2. Season both sides of duck with salt and pepper. Turn dial to Sauté and adjust to 330°F. Press Timer and adjust to 5 minutes. Press Start. In the Inner Pot, sear duck, skin-side down, in hot oil until skin is browned; turn; cook for 1 minute. Set aside 1 Tbsp. drippings. Discard remaining drippings. Place Grill plate in Inner Pot. Turn dial to Bake and adjust to 325°F. Press Timer and adjust to 35 minutes. Close the Air Frying Lid and press Start to preheat. When ready, place the duck on Grill Plate and bake until meat reaches desired doneness (for medium, a thermometer inserted in the breast should read 165°F, 30 to 35 minutes).
3. For orange sauce, in a saucepan, cook and stir garlic in reserved drippings for 1 minute. Add wine; bring to a boil. Cook and stir until reduced by half. In a bowl, combine cornstarch, orange juice, broth, and orange zest. Stir into the wine mixture. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Remove from heat. Whisk in butter and basil until smooth. Serve duck with orange sauce and chutney.

Apricot Date Chutney Canning Recipe
This apricot date chutney is a family recipe that Emmaline was given by her Grandmother. There is something about the smell and taste of old family recipes that bring fond memories flooding back. For a quick appetizer, spread cream cheese and this sweet spiced apricot date chutney on top of small slices of rye bread. It’s also lovely with baked ham and turkey breast.
