How To make Skillet Strawberry Cookies
8 oz Pitted dates; chopped
1/2 c Sugar
1 Egg; slightly beaten
1/2 c Coconut
4 tb Butter
1 ds Salt
1 1/2 c Rice krispies
1/2 c Chopped nuts
1 ts Vanilla
3 oz Red crystal sugar
Green decorator's frosting In a skillet combine dates, sugar, egg, coconut, butter and salt. cook and stir over medium heat until mixture bubbles and thickens, about 5-6 min. Remove from heat and add Rice Krispies, nuts and vanilla. Cool 10 min. Use 1 level tablespoon or less for each cookie. Moisten fingers and form into strawberry shape. Hey everyone! In today’s video I am showing you a healthy skillet cookie recipe with strawberries to make it perfect for valentines! Or any time of year really because it is DELISH!
Healthy Skillet Cookie
1 1/2 cup almond flour
1/4 tsp baking soda
1/2 tsp himalayan salt
2 tbsp coconut oil
2 tbsp almond butter
1/4 cup maple syrup
1 egg
1 tsp vanilla
1/2 cup dairy free chocolate chips
1/2 cup strawberries
350F for 25 minutes
For frosting: take coconut cream from a can of coconut milk (the thick part) and beat with a mixer until fluffy

It's a tag-team effort in the kitchen today as Meiko Temple (@meikoandthedish) and Amanda Hesser (@amandahesser) each bake up Meiko's Strawberry Cornbread Skillet Cobbler. It's a dish that involves a lot of strawberries, a few twists, and, in today's case, a lot of laughs as well. INGREDIENTS
Strawberry Filling
3 lb. strawberries hulled and sliced
3/4 cup granulated sugar
1/4 teaspoon black pepper
1/4 teaspoon kosher salt
2 tablespoons cornstarch
2 tablespoons lime juice
10 sprigs of mint julienned + extra for garnish
2 teaspoons vanilla extract
Cooking spray
Cornbread Topping
1 cup all-purpose flour
1/2 cup cornmeal
1/2 cup granulated sugar
1/2 cup powdered sugar
1 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
1/2 cup unsalted butter melted and cooled
1 cup buttermilk, heavy cream or non dairy milk
Optional
Ice cream to serve

INGREDIENTS
• 2 cups flour
• ½ cup sugar
• ¾ cup brown sugar
• 1 tsp baking soda
• ½ tsp salt
• ¾ cup unsalted butter, softened
• 1 egg
• 2 tsp vanilla extract
• 1 cup mini chocolate chips
• sprinkles for decoration
DIRECTIONS
1. Preheat oven to 350ºF. With an electric or hand mixer, cream butter and sugars.
2. Add egg and vanilla and beat until incorporated.
3. Add flour, baking soda and salt and mix on low speed until combined.
4. Mix in chocolate chips and transfer to greased 10 inch (ovenproof) cast iron skillet.
5. Bake for about 20 minutes (cookie will continue to cook in skillet).
6. Let cool slightly and serve warm.
