4 md Tomatoes, sliced
1 md Onion, sliced
1 1/2 ts Salt
1 md Icicle radish, cut into

1/2 lb Spinach (or cabbage
-mustard greens or -watercress) 5 md Sampaloc (tamarind)

and tamarind. Simmer 1 hour or until pork is tender. 2. Optional: Remove tamarind and mash with some broth. Strain juice into
pot. 3. Taste for seasoning. Bring to a boil. Add green beans and radish 10
minutes. 4. Add spinach, cover and remove from heat. Let stand 5 minute to fi

3 lbs pork ribs
10 cups of water
3 medium size tomatoes, chopped
1 medium size onion, chopped
1 packet sinigang powder mix (add extra if you like it really sour)
1-2 tbsp fish sauce (adjust to your desired taste)
6 pieces of taro (also known as gabi or dasheen)
10 pieces of okra
2 eggplants, sliced
2 cups long green beans, cut into 2 inch pieces
5-6 pieces of sweet chilies (you can also use Serrano peppers)
2 bunches of baby bok choy
Other vegetable options: radish, water spinach, or mustard greens.

- 2 tbsp canola oil
- 8 cloves of garlic smashed
- 1 medium yellow onion diced
- salt to taste
- 1 lbs pork belly + 1 lbs pork shoulder (2 lbs pork total)
- 3 ripe roma tomatoes, diced
- 1 tablespoon fish sauce (patis) + additional as condiment
- 4 cups water
- 4 tablespoons tamarind paste (souring agent)
- 3 corms taro, peeled and cut into quarters
- 1/2 teaspoon ground black pepper
- 1 cups sliced daikon radish (labanos) - cut cross-wise
- 2 pieces long green chili pepper (siling mahaba)
- 15 pieces okra
- 12 pieces snake beans, cut in 2 inch long pieces
- 3 cups kangkong leaves (also called chinese spinach or water spinach. Can substitute with baby bok choy)

THE PERFECT SINIGANG NA BABOY RECIPE (exact measurements below)
SINIGANG NA BABOY or PORK SINIGANG is a tamarind based soup and a very popular Filipino dish. Pork is usually stewed in tamarind, garlic and tomatoes and vegetables were simultaneously placed into the pot. However, in this version I sauteed it with garlic, onion, tomato and added lemongrass to level up the taste. Serve it while it's hot, perfectly partnered with a freshly white steamed rice and of course with a condiment of fish sauce & red chili.
Ingredients:
4 cloves garlic
1 medium-sized onion
2 medium-sized tomato
3/4 kg of pork spare ribs
3 tbsp of fish sauce
1/2 tsp of ground pepper
2 stalks of lemongrass
200g of taro or gabi
4 cups of pork ribs broth
9 pcs of string beans
1 bundle of river spinach or kangkong
250g or 1/4kg of tamarind (you can adjust the sour taste according to your preference)
2 pcs of green chili
