How To make Jean's Sweet and Sour Pork
3/4 lb Lean boneless pork
1 tb Rice wine or dry sherry
1 tb Light soy sauce
1/2 ts Salt
1 sm Green bell pepper
1 sm Red bell pepper
1 Carrot
2 Scallions
1 Egg -- beaten
2 tb Cornstarch
2 c Oil, preferably peanut
3 oz Canned lychees, drained, OR
1 -fresh orange in segments
SAUCE:
2/3 c Chicken stock
1 tb Light soy sauce
1/2 ts Salt
1 1/2 tb Chinese white rice vinegar
- or cider vinegar 1 tb Sugar
1 tb Tomato paste
1 t Cornstarch
1 t Water
This is not the traditional Chinese version, but this slightly sweeter dish is the way you'll find it in this country. CUT PORK INTO 1-INCH cubes; put into a bowl with the rice wine or sherry, soy sauce and salt. Marinate for 20 minutes. Cut the green and red peppers into 1-inch
squares. Peel and cut the carrot and scallions into 1-inch chunks. Bring a pot of water to a boil and
blanch the carrot in it for 4 minutes; drain and set aside. Mix the egg and cornstarch in a bowl until they are well blended into a batter. Lift the pork cubes out of the marinade, put them into the batter and coat each piece well. Heat the oil in a deep-fat fryer or large wok until it is almost smoking. Remove the pork pieces from the batter with a slotted spoon, and deep-fry them. Drain the deep-fried pork cubes on paper towels. Combine the chicken stock, soy sauce, salt, vinegar, sugar and tomato paste in a large saucepan. Bring it to a boil. Add all the vegetables, but not the lychees or oranges, and stir well. In a small bowl, blend together the cornstarch and water. Stir this mixture into the sauce and bring it back to a boil. Turn the heat down to a simmer. Add lychees or oranges and pork cubes. Mix well, and then turn the mixture onto a platter. Serve at once.

1 large bowl seasoned corn flour

Salt to taste

4 tablespoons tomato ketchup
4 tablespoons vinegar
4 tablespoons sugar
Dark soy sauce
Optional Vegetables
1 onion
1 tin of pineapple or 200g fresh pineapple
1 green pepper

There are many sweet and sour sauce variations around and many ways to make it. I will show you a way which makes a perfect sweet and sour sauce every time. This sauce can be made ahead of time and stored in the fridge – it can be frozen-thawed and used. This sauce takes your sweet and sour Chinese or any sweet and sour dishes to a new level.
A must-try if you do not believe – this is fail-safe and is fully adjustable if you want to go sourer or sweeter that is up to you.

Ingredients
3 cups of water
Juice of 1 orange about 50 – 60 ml.
¾ cup of sugar
¼ cup ketchup
5 – 6 tbsp apple cider vinegar – some kinds of vinegar are more potent than others
Good ½ tbsp dark soy sauce
Red food colour – optional up to you but every takeaway uses it.
Cornstarch water for slurry mixed at 1 tbsp cornstarch 3 tbsp water.
Now at the taste and adjust stage - dont forget this is straight from the pan and not cooked in the final dish. You may think its too sour and go over board with the sugar or you may think its too sweet etc - its NOT this works just adjust a little.

Servings 4-6 servings
Ingredients:
Slow-Cooked Pork Belly:
2.2 lb (1Kg) rindless pork belly slices chopped in half (each piece being approx. the length of your index finger)
4 1/4 cups (1 Litre) hot chicken/veg stock
1 thumb sized piece of ginger peeled and finely chopped (or 1 tbsp of minced ginger)
3 cloves garlic peeled and chopped in half
1 tbsp. rice wine
1 tbsp. caster sugar
Glaze:
2 tbsp vegetable oil
pinch of salt and pepper
1 thumb-sized piece of ginger peeled and minced
1 red chilli finely chopped
2 tbsp Honey
2 tbsp brown sugar
3 tbsp dark soy sauce
1 tsp lemon grass paste
To Serve:
Boiled rice
Green Vegetables
Instructions:
1. Add all the slow-cooked pork belly ingredients to a pan (not the glaze ingredients) I use a cast iron casserole pan.
2. Bring to the boil, then place a lid on, turn down the heat and simmer for 2 hours.
3. Turn off the heat and drain the pork. You can reserve the liquid if you like (Perfect for a Thai or Chinese noodle soup).
4. Chop the pork into bite sized chunks. Add 1 tbsp. of the oil to a frying pan, and then mix the remaining glaze ingredients in a small bowl.
5. Heat the oil and add in the pork, salt and pepper, frying on a high heat until the pork starts to turn golden.
6. Now pour the glaze over the pork and continue to cook until the pork looks dark and sticky.
7. Remove from the heat and serve.
Notes
Can I make it ahead?
Yes, you can make it up to the end of step 2 (where the pork is slow cooked and then drained). Then quickly cool, cover and refrigerate (for up to two days) or freeze. Defrost in the refrigerator overnight before slicing and frying the meat.
You can also make the sauce ahead, then cover and refrigerate it up to a day ahead.
Can I make it Gluten free?
Yes! Replace the soy sauce with tamari. I've done this several times and it works great.Replace the rice wine with sherry (usually gluten free, but best to check).Also make sure you use gluten free stock.
Can I use my slow cooker?
Yes, you can do the first stage in the slow cooker. Cook on high for 4-5 hours or low for 6-7 hours. Keep an eye on the level of liquid and top up with a little more if needed.
