Filipino Sinigang Recipe w/ Pork Ribs | Asian Recipes
Filipino friends, please let me know what you like in your sinigang in the comments!
I got so many request for this recipe, and I am very happy about that because it's one of my favourite Filipino dishes! I remember the first time having it and thinking it's like the Filipino tom yum! Sinigang is a sour soup, owing its sour flavour from tamarind. With lots of veggies and hearty pork ribs, this is the perfect healthy winter dish.
Nowadays, most people make sinigang using a powdered soup mix, but I make mine completely from scratch and you'll see that it's really not any more difficult! Change up with protein if you don't eat pork, as sinigang can be made with any kind of protein. Change up the veggies, too, if you like!

Sinigang na Buntot ng Baboy | Pork Tail In Sour Broth Recipe
Pork tail is relatively cheap as it is quite boney, has good amount of fat and not a popular cut of pork. But with bones and fat come flavor. Just cut it into bite size pieces and no one would notice what part it is. It is also not a tough meat because it's behind the pork and does not get that much exercise so to speak. It's actually perfect for sinigang.

THE PERFECT SINIGANG NA BABOY | PORK SINIGANG | FOODNATICS
THE PERFECT SINIGANG NA BABOY RECIPE (exact measurements below)
SINIGANG NA BABOY or PORK SINIGANG is a tamarind based soup and a very popular Filipino dish. Pork is usually stewed in tamarind, garlic and tomatoes and vegetables were simultaneously placed into the pot. However, in this version I sauteed it with garlic, onion, tomato and added lemongrass to level up the taste. Serve it while it's hot, perfectly partnered with a freshly white steamed rice and of course with a condiment of fish sauce & red chili.
Ingredients:
4 cloves garlic
1 medium-sized onion
2 medium-sized tomato
3/4 kg of pork spare ribs
3 tbsp of fish sauce
1/2 tsp of ground pepper
2 stalks of lemongrass
200g of taro or gabi
4 cups of pork ribs broth
9 pcs of string beans
1 bundle of river spinach or kangkong
250g or 1/4kg of tamarind (you can adjust the sour taste according to your preference)
2 pcs of green chili
