How To make Sicilian Steak
2 lb Round steak
2 c Tomato, crushed
1/4 c Flour
1/8 t Dry mustard
1/8 t Ground pepper
1/2 t Oregano
1 ea Garlic clove, minced
1 T Parsley, chopped
3 T Olive oil
1/2 t Salt
Cut steak into serving pieces and pound thin. Mix flour, salt, pepper and dredge meat in mixture. Brown the meat with oil in large skillet. Pour off the liquid, add tomatoes, oregano, mustard,parsley and garlic. Cover and simmer about 1 hour.

1/4 CUP OPICI CHANTI WINE
HAND SCOOP OF SUGAR (1/2 TAB OF SUGAR)
(WHEN SAUCE COMES TO IT'S FIRST BOIL STICK YOUR WOODEN SPOON THE TIP IN TH E BAKING SODA AND IT REMOVES THE ACID FROM THE TOMATO'S).
STEAK (I USED RIB STEAKS) CUT A PIECE OF FAT OFF OF IT USE THAT TO COAT THE FRYING PAN)
6-8 CLOVES OF MINCED GARLIC AND EXTRA FOR COOKING
MARINATE THE STEAK WITH GARLIC AND S&P AND OREGANO AND ONLY IN HOT CAST IRON POT SEAR THE STEAKS WHILE IT'S COOKING ADD SOME MORE GARLIC.
(NOTE I DO THIS WHEN THE STEAKS ARE VERY REAR BECAUSE THEY WILL COOK FAST WHEN YOU ADD THE SAUCE).
WHEN STEAK IS COOKING ALMOST DONE ADD (OPICI) CHIANTI WINE, COVER AND ADD SAUCE.

Sicilian Style Italian Braciole
This Braciole recipe is the way my mother use to prepare it . It does take some practice rolling up the stuffed slices of beef but once you get the knack of it it will become much easier. If you prefer you can use pork instead of beef .Also you can leave out the hard boiled eggs but it just won't be the same without it ! It is important to cook the meat for several hours so that it will become soft and tender .

6 small cloves of garlic
1/3 of a bunch of Fresh Parsley
3 medium tomatoes
2/3 cup of Papa Vince Extra Virgin Olive Oil (EVOO)
Papa Vince Sea Salt to taste
PREPARATION:
NOTE: When grilling, Sicilians season their steaks with NOTHING - not even salt. This ensures that their steaks remain tender and juicy.
When serving, they top off their steaks with this steak sauce which is made from fresh garlic, tomatoes, and parsley. This recipe is one of my favorites and it's perfect for grilling season!
Peel and grate the garlic into a bowl using the Papa Vince peeler.
Grate the tomatoes into the bowl.
Add in the chopped parsley.
Add in some Papa Vince Sea Salt and the Papa Vince EVOO.
Stir all the ingredients together and the sauce is ready for your steak.
Grill your steak the way you like it but without adding any extra seasoning.
Serve the steak with a tablespoon of steak sauce on top.
You can use a food processor but the flavor is better if you mix everything by hand.
