How To make Shrimp Pasta
20 Jumbo shrimp, raw or cooked
12 oz Fresh pasta; -=OR=-
8 oz -Dry pasta, such as
- angel hair, spaghettini, - pastina, orzo, riso - or bowties 3 tb Olive oil
1/2 c Dry white wine
4 tb Unsalted butter
2 tb Chopped parsley
PEEL AND DEVEIN SHRIMP, leaving the swimmer intact. Bring 4 quarts of cold, salted water to a boil over high heat on the stove. Heat the oil in a skillet over high heat, add the shrimp and cook 1 minute, tossing or stirring. Add the wine and cook another 3-to-4 minutes. Remove from heat, whisk in the butter and add the chopped parsley. Meanwhile, add the pasta to the boiling water, cook to desired doneness, drain and toss with the shrimp. Place on a serving platter or in a large serving bowl and serve immediately.

One-Pot Lemon Garlic Shrimp Pasta
Servings: 4
INGREDIENTS
8 ounces linguine
2 tablespoons olive oil
8 tablespoons (1 stick) unsalted butter
4 cloves garlic, minced
1 teaspoon crushed red pepper
1 ¼ pounds large shrimp
Salt and pepper to taste
1 teaspoon dried oregano
4 cups baby spinach
¼ cup parmesan
2 tablespoons parsley, chopped
1 tablespoons lemon juice
PREPARATION
1. In a large pot, boil water and add pasta. Cook (stirring frequently) until al dente.
2. Drain and set aside pasta.
3. In the same pan, heat olive oil and 2 tablespoons of butter. Add garlic and crushed red pepper, cook until fragrant.
4. Toss in shrimp, salt and pepper to taste, and stir until shrimp are turning pink, but not fully cooked.
5. Add oregano and spinach, cook until wilted.
6. Return cooked pasta to the pot, add remaining butter, parmesan, and parsley. Stir until well mixed and the butter is melted.
7. When the shrimp is cooked, add lemon juice, mix once more, then serve while hot.
8. Enjoy!

How to Make Shrimp Scampi
This easy and ultra-satisfying shrimp scampi recipe comes together in twenty minutes and is totally delicious! Packed with lemony, garlic goodness, buttery pasta, and delicious sautéed shrimp; it might just be the perfect (date night) meal!

I love this shrimp scampi pasta recipe! Buttery, zesty and so satisfying… If you want to add more lemon wine butter and garlic to this recipe I certainly won’t stop you!
I love using spaghetti but if you want to sub in your favorite pasta to make linguini shrimp scampi for example then go ahead! If you’d like to try making your own pasta from scratch
ABOUT THE SHRIMP
I bought some super-fresh jumbo shrimp to make this dish and they made all the difference! Don’t use frozen precooked shrimp to make this recipe, the taste and texture will be subpar.
Cleaning, or deveining shrimp can seem a bit intimidating so I wanted to go over the process.
Start by removing the shell. You can peel it off from the bottom where the little swimmeretes are.
Once the shell is removed use a small knife to make a roughly 1/4″ deep cut down the top of the shrimp.
Now you should be able to see a small vein which you can pull out using your fingers.
That’s it! If you’re having difficulty you can cut a bit deeper and use a knife to help remove the “vein” which is actually the shrimp’s digestive tract.

*RECIPE*
INGREDIENTS:
250g/0.5 lb shrimp or prawn
110g/4 oz pasta (fettuccine, spaghetti or penne)
2 shallots
3 cloves garlic
2 tbsp olive oil
2 tbsp butter
1/2 cup heavy cream
1/4 cup cheese (used parmesan)
Parsley (optional)
—Spice mix—
1/2 tsp chilli flakes
1/4 tsp black pepper
1 tsp thyme
1 tsp oregano
1/2 tsp salt
PROCESS:
1. Coat 250g/ 0.5 lb shrimp or prawn with half the spice mix and set aside for 5-10 minutes
2. Mince 2 shallots, grate 3 cloves of garlic and 1/4 cup cheese
3. On medium flame, heat olive oil and fry shrimp for 2 minutes (medium size) or 3 minutes (large size) per side
4. Reduce flame to low and add 2 tbsp butter
5. Sauté shallots for 30 seconds
6. Next sauté garlic and remaining spice mix for 30 seconds
7. Add 1/2 cup water and simmer for 5 minutes
8. In the meantime start cooking pasta in salted boiling water as per package instructions
9. When the sauce had reduced, add 1/2 cup heavy cream and simmer for 1 minute
10. Mix in grated cheese and switch off the flame. Cooking further might curdle the sauce
11. Add the shrimp and let it infuse with into the sauce
12. Toss in cooked pasta, preferably slightly undercooked as it will continue to cook in the sauce
13. Mix until the pasta is well coated and creamy. The sauce might seem watery but it will thicken in 5 minutes
14. Garnish with parsley and serve

• No thyme or oregano?
Sub with any preferred herb. Mixed Italian herbs work well too
• No parmesan cheese?
Sub with preferred cheese
• No heavy cream?
Sub with fresh cream or béchamel sauce

TIPS:
• This sauce also works as a side with vegetable, rice or mashed potatoes if you would like to skip the pasta
• To spice it up further, add 1 tsp chilli powder/cayenne powder to the spice mix
