Not having used sherry before, what is the type used when a recipe just calls for sherry? I see cream sherry, dry sherry, and very dry sherry at my local grocery store. Does brand matter much?

Do you really need another bottle of vinegar in your pantry? The answer is yes, if it’s sherry vinegar. Sherry vinegar comes from the sherry region of Spain and is aged for at least six months, which leads to its rich color and complex flavor. Because it is a little less sweet than balsamic, and a bit more nuanced than many other vinegars, there are many uses for it. Thomas Joseph shares three of his favorites.

Chicken Sotanghon Soup is a comforting Filipino noodle soup. Here's a recipe to make it:
Ingredients:
2 tablespoons cooking oil
4 cloves garlic, minced
1 onion, sliced
1 thumb-sized ginger, julienned
1.5 pounds chicken breast or thigh, cooked and shredded
8 cups chicken broth
2 tablespoons fish sauce (adjust to taste)
Ground black pepper, to taste (freshly ground if possible)
2 carrots, julienned
2 cups cabbage, shredded
8 ounces sotanghon noodles (also known as vermicelli noodles), soaked in water to soften
3 green onions, chopped
Fried garlic, for garnish
Calamansi or lemon slices, for serving
Instructions:
In a large pot, heat the cooking oil over medium heat. Sauté the garlic, onion, and ginger until aromatic and the onions are translucent.
Add the shredded chicken to the pot and cook for a couple of minutes to combine the flavors.
Pour in the chicken broth and bring to a boil. Season with fish sauce and ground black pepper.
Lower the heat and add the carrots and cabbage. Simmer for about 2 minutes or until the vegetables are tender yet crisp.
Add the sotanghon noodles and cook according to the package instructions, usually just a few minutes until they are soft.
Turn off the heat and add the green onions.
Serve hot, garnished with fried garlic and with calamansi or lemon slices on the side for added zest.
Enjoy your Chicken Sotanghon Soup with a side of steamed rice or as a standalone dish. Adjust the seasoning according to your preference, and feel free to add more vegetables or ingredients as you like.
