Kuah laksa Che Nom guna ikan parang & tambah sikit ikan Selayang. Ada bahan-bahan lain untuk tambah sedap mcm udang, ikan kurau masin dan juga kerisik.
Resepi mana yg authentic, agak susah nak pilih satu sebab ada sedikit berbezaan , mungkin ikut resepi turun temurun masing-masing lah kan? Cth, ada yg letak udang, ada yg tidak..ada yg tak letak kantan..ada yg letak. Jadi sesiapa yg nak share cara keluarga di sini..dipersilakan..

1.5kg ikan parang
500g ikan selayang
2-3 liter air
2 cawan minyak masak
6 sb serbuk kari
500ml air rebusan kulit udang
3-4 keping asam gelugor
2-3 sb kerisik
500ml santan kotak
1 kuntum kantan
1 ikat daun kesum
Garam secukup rasa
Perasa/MSG, jika suka
1 bunga kantan/Kesum/Daun selasih
Bahan-bahan untuk kisar halus:
6-7 biji bawang merah kecil
8 ulas bawang putih
2 inci halia
2 inci lengkuas
3 sb udang kering
30g ikan masin kurau
2 batang serai
25 biji cili kering
10-12 isi udang segar (saiz S)
Bahan-bahan untuk sambal belacan:
4-5 biji cili merah besar
6-8 tangkai cili padi merah
2 inci belacan bakar
3 sb jus limau kasturi
Garam secukup rasa
Gula, jika suka
Bahan-bahan untuk dihidang:
Bawang merah besar
Kacang panjang
Timun
Daun kesum
Daun selasih
Bunga kantan
Taugeh
Limau kasturi
Lobak masin

1.5kg wolf herring fish
500g round scad fish
2-3 litres of water
2 cups cooking oil
6 tbsp fish curry powder
500ml of shrimp skin stocks
3-4 pieces tamarind slices
2-3 tbsp toasted coconut paste
500ml coconut cream
1 ginger torch
1 bunch of vietnamese coriander
Salt to taste
Seasoning/MSG, if desired
1 ginger torch/Vietnamese mint/Basil
Ingredients for fine grind:
6-7 shallots
8 cloves garlic
2 inch ginger
2 inch galangal
3 sb dried shrimp
30g salted kurau
2 stalks lemongrass stalks
25 dried red chilli
10-12 fresh peeled shrimp (size S)
Ingredients for sambal belacan:
4-5 large red chillies
6-8 stalks bird’s eye chili
2 inches toasted belacan
3 tbsp kalamansi lime juice
Salt to taste
Sugar, if desired

How To Mix the Sherry Cobbler | Three Ways
Have you ever wondered how some cocktails were mixed almost 200 years ago? In this new “Old vs New” segment of Cocktail Time, I mixed Sherry Cobblers, three ways. The first is from the 'How To Mix Drinks or The Bon-Vivant's Companion' by Jerry Thomas 1862 edition, the next one was from his 1887 edition and the last one is a modern version. With the help from 'Imbibe!' by David Wondrich it’s possible to know what ingredients and in which quantities were used back then and I have to say that preparing a cocktail in an old-fashioned way was super fun!
Sherry Cobbler is a staple American cocktail and I had to start this new segment with this cocktail. It’s easy to make and it tastes and looks delicious!

Sharp Edge KNIVES:
Sherry Cobbler (1862)
· 2 wine-glasses of sherry
· 1 table-spoonfull of sugar
· 2 or 3 slices of orange
Fill a tumbler with shaved ice, shake well, and ornament with berries in season. Place a straw as represented in the wood-cut
Sherry Cobbler (1887)
· 1 table-spoonfull of fine white sugar
· 1 slice of orange, cut into quarters
· 2 small pieces of pineapple
Fill the glass nearly full of shaved ice, then fill it up with sherry wine. Shake up, ornament the top with berries in season, and serve with a straw.
Sherry Cobbler modern version
· 90ml (3oz) of sherry
· 22,5ml (0.75 oz) Raspberry syrup
· 1 wedge of orange
Shake everything in a cobbler shaker and strain in a wine glass or goblet filled with crushed ice. Add a straw and garnish with raspberries, mint and sprinkle with powdered sugar.
