How To make Seven Pepper Chili Part 1
3 lb Lean stew meat
1 lb Pork loin; ground
2 tb Pure lard or shortening
3 lg Yellow onions; chopped
2 ts Salt
5 Jalapenos; fresh/seeded
1 lb Tomatotes; red ripe
Used canned only if you must 7 Dried chiles anchos (big
-black ones) 2 Dried chile new mexico (big
-red one) 2 ts Cumin seeds
2 Dried japanese chiles
-- little skinny red ones 1 ts Ground cumin
1 ts Sugar
7 cl Garlic
1 cn Tecate beer
1 tb Ground chiles pasillas
1 Unsweetened chocolate; (1
-oz) 1 ts Crushed chilies quebardos
-(pequins) 1 qt Water
1/2 Cuo masa harina
1 ts Tabasco sauce

DR PEPPER CHILI
Easy homemade Dr. Pepper chili recipe. adding Dr. Pepper to your chili adds a bit of sweetness while balancing out all those chili ingredients. It'll leave your guests wondering what that unique flavor is while not jeopardizing the great taste of chili we all love.
Shopping List:
1 lb. 80/20 ground chuck beef
1/2 lb. ground or breakfast sausage
1 small can Rotel
1 small can tomato paste
1 cup beef broth
1 tbsp. chili powder
1 tsp. each of ground cumin, dried oregano
1/8 tsp. ground cinnamon
Regular Dr. Pepper (not diet), just enough to cover the chili by about 1 inch
Salt and pepper to taste
Directions:
In a skillet over medium high heat, brown the ground beef and sausage.
When the meat has browned, drain if necessary, then add the onions with a pinch of salt. Cook 5-7 minutes more until the onions are soft.
Transfer to a deep pot or Dutch oven then add the Rotel, tomato paste and seasonings. Stir to combine.
Add enough Dr. Pepper tojust cover the mixture by about 1 inch. Stir.
Simmer the chili over medium low heat for about 1 1/2 to 2 hours or until you reach the consistency you prefer.
Garnish with your favorite chili toppings and enjoy!

+ For the chili con carne:
2 pasilla chiles (dried whole)
4 arbol chiles (dried whole)
4 chipotle chiles (dried whole)
3 guajillo chiles (dried whole)
3 ancho chiles (dried whole)
1 whole chuck roast
Vegetable oil
1 white onion, roughly chopped
6 cloves garlic, crushed
4 cups chicken stock
Cinnamon
Ground allspice
Ground coriander
Dried oregano
2-3 Tbsp tomato paste
2-3 Tbsp masa harina
2 limes, juiced
Shredded cheese, for garnish
+ For the vegetable stock:
1 white onion
4 ribs celery
1 bulb fennel
1 parsnip, peeled
3 carrots
1 leek
1 small head cauliflower
2 beets
Vegetable oil
Sprigs of fresh thyme
Small head of garlic, halved
1 bunch parsley
2 dried bay leaves
1 Tbsp whole black peppercorns
1 handful dried porcini mushrooms
2 sheets dried kombu
+ For the vegetarian chili:
2 pasilla chiles (dried whole)
4 arbol chiles (dried whole)
4 chipotle chiles (dried whole)
3 guajillo chiles (dried whole)
3 ancho chiles (dried whole)

3 poblano peppers
3 jalapeno peppers
2 large onions, roughly chopped
Olive oil
6-7 cloves garlic, roughly chopped
2-3 Tbsp tomato paste
3 tsp toasted cumin
Ground coriander
Dried oregano
1 can cannellini beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can pinto beans, drained and rinsed
14oz can diced tomatoes
14oz can fire-roasted diced tomatoes
1 tsp liquid aminos
2 Tbsp nutritional yeast
3 cups vegetable stock (ingredients above)
Sour cream and sliced jalapenos, for garnish
