How To make Sesame Pumpkin Seed Brittle
1 c Sugar
3 tb Hulled green pumpkin seeds,
Chopped 1 1/2 ts Sesame seeds
In a dry heavy skillet cook the sugar over moderate heat until it begins to melt and continue cooking it, stirring with a fork, until it is melted completely and is golden caramel. Remove the skillet from the heat, stir in the pumpkin seeds and the sesame seeds, and, working quickly, pour the mixture onto a sheet of foil. Super Easy Super Seed Brittle
This is a great and delicious alternative to everyday trail mix! It is sweet and crunchy and so easy to make!
Nutters has an amazing bulk section so it was easy to find all the ingredients I needed to make this in one place!
You Need:
1/4 cup chia seeds
1 cup pumpkin seeds
1/2 cup sesame seeds
1/2 cups raisins
1/2 cup shredded coconut
1 teaspoon cinnamon
1/4 teaspoon sea salt
1 teaspoon vanilla extract
2 tablespoons coconut oil, melted
1/2 cup honey
Preheat oven to 325°F and line a rimmed baking sheet with parchment paper.
In a large mixing bowl, add all of the dry ingredients; chia seeds, pumpkin seeds, sesame seeds, raisins, shredded coconut, cinnamon, and sea salt.
Stir well to combine.
In a separate small bowl, combine all of the wet ingredients; coconut oil, honey and vanilla extract.
Slowly drizzle wet ingredients into the dry ingredients, stirring to ensure everything is evenly coated and the seed mixture is sticky and begins to form into a bit of a ball.
Transfer the seed mixture to the baking sheet. Using your hands, evenly spread out seed mixture on the baking sheet until it is about 1/4″ thick. It should be sticky enough but you may need to use your hands to encourage it to stick together a little.
Transfer to the oven and bake for 20-25 minutes until golden, keeping a close eye to ensure it does not burn.
Remove from the oven and allow to cool completely before breaking it apart, it will still be soft when it comes out of the oven. Once cooled, crack or cut into pieces using a large knife. You can store the seed brittle in an air-tight container for 2-3 day, or I personally like to keep mine in the freezer to keep it extra crispy and crunchy.

With just two ingredients, this easy gluten-free snack recipe is ready in no time. Pumpkin seed brittle has become my new go-to snack, so I can't wait to share it with you!
Recipe:
PUMPKIN SEED BRITTLE
Serves 4
INGREDIENTS:
1 1/2 cups sprouted pumpkin seeds or toasted pumpkin seeds
1/3 cup maple syrup
INSTRUCTIONS:
1.) Preheat the oven to 350°F.
2.) Place the pumpkin seeds on a baking sheet lined with parchment paper. Spread them out in an even layer.
3.) Add the maple syrup and stir to combine. This can be done in a separate bowl if you prefer. Spread the seeds in a thin layer, with the seeds close together.
4.) Bake for 12 to 20 minutes, checking them after 12 minutes. The edges should be browned and the center should firm up after cooling. If it remains bendable in the center simply bake the brittle a few more minutes.
5.) Cool completely, then break into pieces. Store in a covered container at room temperature for up to 5 days (if it lasts that long).
