Soft Vegan Burger Buns- Oil-free, Wheat-free, Gluten-free
Millet Burger Buns
Yeilds 6 buns
2 and 1/2 cups millet flour
2 tsp baking powder
¾ tsp fine sea salt
1/2 tsp baking soda
2 tbsp ground flax
2 and 1/2 cups water
1 tbsp apple cider vinegar
1/3 cup whole psyllium husks
2 tbsp date syrup (optional)
Sesame seeds for topping
In a bowl combine the dry ingredients, except for the psyllium husks. In a separate bowl combine the wet ingredients and the psyllium husks. Let rest for 5 minutes until a gel like consistency is achieved.
Combine the wet and dry ingredients. Wet your hands and add 1/6 of the dough to each section of a bun pan.
Bake in a preheated oven at 325 F for 50 minutes. Remove and allow to cool before cutting.

Homemade Burger Buns ????
500g x Strong White Bread Flour
7g x Fast Action Yeast
30g x Caster Sugar
10g x Salt
25g x Melted Butter
300ml x Tepid Milk
1 x Egg (Beaten)
Seeds for sprinkling
1. Place 500g of strong bread flour into a mixing bowl and make a well in the centre using the back of a spoon.
2. Add in 7g of fast action yeast, 30g of sugar, 10g of salt, 25g of melted butter and 300ml of tepid milk.
3. Mix together from the centre of the bowl, gradually drawing in the flour from the outside until it forms a dough.
4. Lightly Flour a work surface and tip out the dough. Knead for 10 minutes. Until it looks shiny and smooth.
5. Place the dough back into the mixing bowl, cover with a clean damp cloth and leave to prove for 1 Hour.
6. After 1 hour, uncover the dough and press out the air. Divide the dough into 8 equal sized pieces and roll them into balls.
7. Place the dough balls onto a baking tray lined with parchment paper. Wet your hand and firmly press the dough balls as flat as you can.
8. Beat 1 egg and brush onto the burger buns. Cover again and leave for 30 minutes.
9. After 30 minutes, uncover and brush once more with the egg. Sprinkle with the seeds of your choice or leave plain if you prefer.
10. Bake in a preheated oven at 180°C for 20 to 25 minutes or until golden brown.

RECIPE: 820 g bread flour, 20 g honey, 550 g whole milk, 18 g sea salt, 18 g fresh yeast, 100 g unsalted butter. Mix ingredients by hand (this dough will kill mixer) in bowl until dough comes together. Transfer to work surface and knead until dough passes windowpane test. Let ferment 2 hours punching down after 1st hour. After fermenting, shape into seeded buns by dividing the dough at 120g and round. Roll tops of rounds into damp kitchen towel and dip in bowl of sesame seeds. Turn right side up and proof for 1 Â_ to 2 hours. Bake in 350F oven approx. 30 minutes.
