How To make Secret Treat Molasses Cookies
1/2 c Butter; softened
1/2 c Packed brown sugar
1 Egg
1/2 c Molasses
2 1/2 c Flour
3/4 ts Baking soda
1/2 ts Salt
1/2 ts Ground cinnamon
1/2 ts Ground ginger
1/2 c Strawberry preserves
Glaze: 1 2/3 c Powdered sugar
2 tb Water
1/4 ts Vanilla extract

They're fun to decorate and delicious to eat, with a surprise flavor inside." - Ruby Neese In a large mixing bowl, cream butter and sugar. Add egg; mix well. Beat in molasses. Combine flour, baking soda, salt, cinnamon, and ginger; add to creamed mixture and mix well. The dough will be very stiff. Cover and chill several hours or overnight. On a lightly floured surface, roll dough to 1/8" thickness; cut into 2 1/4" to 2 1/2" circles. Place 1/2 tsp. preserves on half of the circles; top with remaining circles. Pinch edges together to seal. Place on a greased baking sheet. Bake at 350 degrees for 10 minutes or until lightly browned. Cool on a wire rack. Combine glaze

Chocolate Molasses Cookies
This is a variation of the basic “Ginger Molasses Cookie”. I thought chocolate would be a great combination to try and guess what? It was a success. I used the same recipe for my Soft Ginger Molasses Cookies. So, here below is the chocolate variation of these soft, thick chocolatey ginger molasses cookies!
SOFT GINGER MOLASSES COOKIES:
Makes about 30 cookies
2/3 cup unsalted butter, softened
1/2 cup granulated sugar
1/3 cup brown sugar
1/4 cup +2 tbsp molasses
1 whole egg
1 tsp vanilla extract
1/2 tsp salt
1 tsp cinnamon
2 tsp ginger
2 cups all-purpose flour
1 1/2 cup chocolate chunks
1/3 cup cocoa powder
Instructions
Preheat oven to 350 Fahrenheit (176 celsius).
In a large bowl, cream together sugar and butter.
Next, add vanilla extract, egg, molasses and mix.
In a medium bowl add flour, cocoa powder, salt, cinnamon, ginger, and baking soda.
Combine dry mixture into wet mixture and combine until flour is just combined. Do not over mix!
Add chocolate chunks
Next, chill dough in refrigerator for 30-60 minutes.
Now add granulated sugar to small bowl and form dough in balls and roll balls into sugar.
Add onto buttered cookie tray or on parchment paper.
Bake for 11-13 minutes.
