Ginger Molasses Cookies
4 Cups Organic All Purpose Flour
11/2 cup Organic Cane Sugar
4 tsp. Baking Soda
1 tsp. Pink Himalayan Salt
2 Eggs
1 1/2 Cups Butter (softened & cut into cubes)
1/2 Cups Non-GMO Molasses
2 Drops Cinnamon Vitality
2 Drops Clove Vitality
5 Drops of Ginger Vitality
????Step. Add the Flour, Baking Soda, Sugar, and Salt to a bowl and mix well.
????Step 2. Crack Eggs in a separate bowl and then add them to the dry ingredients.
????Step 3. Add the Molasses, Butter, Sugar, Cinnamon Oil, Clove Oil, and Ginger Oil to the bowl with the dry ingredients
????Step 4. Now mix all the ingredients until well combined. (An electric mixer works best, but using those arm muscles is an excellent workout!)
????Step 5. Chill your dough if you want to make these cookies later (we made ours immediately). Be sure to let the dough sit for 20 minutes before scooping if making it later
????Step 6. Scoop your dough with a cookie scooper or a good old-fashioned spoon. Roll into balls, and then roll each cookie in your granulated cane sugar (you can also skip rolling in the sugar)
????Step 7. Line a baking sheet with parchment paper and preheat the oven to 350 degrees
????Step 8. Place your cookies on a baking sheet 3 inches apart.
????Step 9. Grab a glass cup and use the bottom of the cup to flatten each ball halfway (don't press down too hard; you don't want them completely flat)
????Step 10. Bake your cookies for 10-15 minutes and cool on a baking rack. Enjoy or save them for later.
Thank you so much for being here and spending a piece of your day with me! Your love and support does not go unnoticed!

Crisp Molasses Cookies | Sally's Baking Recipes
Crisp molasses cookies boast wonderfully crunchy edges and tons of spice flavor. Made with extra molasses, these crispy cookies actually snap in half when you break them.

Crisp, Chewy Molasses Cookies Moldow (from the Joy of Cooking)
This is now officially my favorite spiced molasses cookie. It's from the 2006 edition of the Joy of Cooking from one of the publishers. I highly recommend The Joy - it's the best all-purpose cookbook I've ever encountered and I refer to it again and again all the time - but if you don't have the book, here's the recipe with a couple modifications I've made:
Makes 3 dozen cookies
In a large bowl, combine:
1 1/2 sticks softened butter
1 cup sugar
Beat until smooth, then add:
1/2 tsp salt
1 tsp baking soda
2 tsp cinnamon
*2 tsp ginger (originally 1 tsp)
1 tsp ground cloves
1/4 cup molasses
*2 egg yolks (originally 1 whole egg. I prefer using yolks only as it makes the cookies flatter, chewier, and richer. If you like fluffier, cakier cookies, use the whole egg)
Beat until smooth, then add:
2 cups all purpose flour
Stir until the flour is just combined and no lumps/bits of flour remain. Don't overmix! Cover and chill the dough for 2 hours.
Preheat oven to 350F.
Line a baking sheet with parchment or a silpat. Scoop the dough and roll into 1 inch balls, then coat in white sugar. Place the cookie dough balls on the sheet, spaced 2 inches apart (you should be able to fit 12-15 cookies on your sheet, depending on its size.) These cookies need to be baked one sheet at a time.
Bake for 8 minutes total, turning the pan halfway through and checking for doneness at around 7 minutes. When you pull the cookies out, they should still be soft in the middle and seemingly raw, but the edges will be firm and starting to brown a little. Some cookies might have faint cracks on the top.
Let the cookies sit on the pan on a wire rack for a couple minutes to harden, then transfer onto a wire rack to cool completely before storing in an airtight container.

I got this recipe from my Betty Crocker Christmas Cookies 2012 recipe book but you can also find it online at:
Mother LOVED these. I am more partial to ginger cookies :D
1 cup sugar
1/2 cup butter or margarine, softened
1/2 cup shortening
3/4 cup sour cream
1/2 cup mild-flavor molasses
1 egg
3 cups Gold Medal® all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
Heat oven to 375ºF.
2 Mix sugar, butter, shortening, sour cream, molasses and egg in large bowl. Stir in remaining ingredients.
3 Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
4 Bake 9 to 11 minutes or until almost no indentation remains when touched in center. Cool slightly; remove from cookie sheet. Cool on wire rack. Sprinkle with sugar while warm if desired
