ROLL OUT THE DOUGH for this soft + chewy Gingerbread Cookies Recipe

LAY HO LAY HO (how's it going in Cantonese), or should I say HO HO HO! The holidays will hit the ground running with this tasty holiday recipe. Join me in this episode and learn how to make an easy gingerbread man cookies recipe just in time for Christmas!
Gingerbread Cookie Ingredients:
3 cups all purpose flour (525g)*
1 tsp baking soda
2 tsp ground ginger
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 stick room temperature plantbased butter (115g)
1/2 tsp vanilla extract
1/2 cup blackstrap molasses
1/4 cup maple syrup
3/4 cups brown sugar
2 tbsp coconut or almond milk
Icing Ingredients:
1 cup Organic icing sugar
1 tbsp+ coconut or almond milk
splash of vanilla
Directions:
1. Sift the dry gingerbread cookie ingredients (minus the brown sugar) into a large mixing bowl. Then, whisk to combine
2. In another mixing bowl, vigorously whisk together the wet ingredients including the brown sugar
3. Use a spatula to combine the wet and dry mixtures together to form a dough. Then, use your hands to knead the dough into a ball. It should not be sticky and should have a play-dough like texture
4. Cover and let the dough chill in the fridge for about 30min
5. Lightly flour a work surface and divide the ball into 3 portions. Roll the dough into a ball, then use a rolling pin to roll into a 1/4 inch thick sheet
6. Use your favourite cookie cutter to cut out the shapes. Then, free the cookies and carefully release them using a spatula
7. Place the cookies onto a baking tray lined with parchment paper. Repeat with the rest of the dough (25-30 cookies)
8. Preheat the oven to 350F. Meanwhile, let the cookies chill in the fridge until the oven is preheated. Then, bake in the oven for 8-10min
9. Allow the cookies to cool for a couple of minutes, then carefully transfer them to a cooking rack. Once fully cooled, transfer the cookies into airtight containers for storage until ready to decorate
10. Make the icing by combining the icing sugar ingredients together. Add more milk if needed but the icing should feel quite thick
11. Transfer the icing to a small bag. Cut a small hole on one corner and let the decorating commence!
*in this episode, we used Bob’s Red Mill unbleached white all purpose flour which weighs a bit more. The 3 cups used in this episode weighed in at about 525g

How to Make Molasses Cookies
Learn how to make Molasses Cookies with this easy recipe!

Ingredients
¾ cup unsalted butter softened to room temperature (170g)
1/2 cup granulated sugar (100g)
1/2 cup dark brown sugar packed, can substitute light brown sugar (100g)
1 large egg
1/4 cup unsulphured molasses it should say unsulphered on the label, I used Grandma's brand) (60ml)
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour (280g)
1 teaspoon cornstarch
1 teaspoon baking powder
1/2 teaspoon baking soda
¾ teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 1/2 cup granulated sugar for rolling
Instructions
00:00 Introduction
00:09 Combine butter and sugars in the bowl of a stand mixer (or you may use a large bowl and an electric hand mixer).
00:36 Add egg, stir until combined.
00:42 Add molasses and vanilla extract, stir well until ingredients are combined.
01:02 In a separate, medium-sized bowl, whisk together flour, cornstarch, baking powder, baking soda, ground ginger, ground cinnamon, ground cloves, and salt.
01:37 Gradually add the dry ingredients into the wet ingredients until completely combined.
02:00 Cover dough with clear wrap and chill in the refrigerator for at least 3 hours.
02:08 Once dough has chilled, preheat oven to 375F (190C) and line a cookie sheet with parchment paper.
Roll dough into heaping Tablespoon-sized balls and roll in sugar to coat completely.
02:41 Place at least 2 apart on prepared cookie sheet and bake on 375F (190C) for 10-11 minutes.
The cookies should look baked but have slightly under-done centers. Let them cool completely on the baking sheet to finish cooking -- this will make them very soft.

1/4 teaspoon ground cloves
1 1/2 sticks unsalted butter (6 oz / 170g), melted and cooled to room temperature
1 1/2 cups packed dark brown sugar (10.6 oz/ 300g)
2 large eggs (3.5 oz/ 100g), at room temperature
1/2 cup unsulfured molasses (5.6 oz/ 160g)
2 teaspoons apple cider vinegar (0.33 oz/ 9g)
2 teaspoons vanilla extract
1/2 cup demerara sugar, for rolling

QUICK & EASY Molasses Cookies
These Soft Molasses Cookies are the ones my grandma used to make when I was little. I recently found this recipe in her cookbook and decided to share with you this amazing molasses cookies recipe. This cookie is the softest & mixed with the rich flavor of the molasses they are just perfect. These soft molasses cookies are a must if you plan on making a cookie box on Christmas or if you love classic cookies like we do! This recipe is really close to my heart and sharing it with you makes me so happy and proud! Enjoy and let us know how you liked it!

⚪️Ingredients you will need:
- 220g Margarine
- 280g Molasses
- 200g Brown sugar
- 240ml Milk
- 1x Egg
- 2 tsp Baking Soda
- 1 tsp Ginger
- 650g-825g Flour

⚪️Instructions if you need it:
Step 1
1. Mix Margarine and Brown Sugar together
2. Beat the egg before adding it to the mix
3. Add Molasses
4. Dissolve the Baking Soda in a little bit of water before adding it to the milk
5. Mix the ginger with the smaller amount of flour you can use
6. Add in the milk and the flour in your first mixture alternately
7. When you are done, if your dough is too moist and too sticky to roll it out, you can add more flour
Step 2
1. Roll out the dough and use a cookie cutter of your choice to detail cookies
2. Place them on a baking sheet
3. Bake 10-12 minutes at 350F
