LEVAIN BAKERY’S CHOCOLATE CHIP WALNUT COOKIE COPYCAT
YSG Kitcheneria recreates the most famous Chocolate Chip Walnut Cookie in the world. No need to travel to New York City to have a taste of this one of a kind treat. You can now make it in the comfort of your own home.
RECIPE:
200g unsalted butter, cold
100g light brown sugar
100g white sugar
2 eggs
200g all purpose flour
120g cake flour
1 tsp cornstarch
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
250g semisweet chocolate chips
200g walnuts
US MEASUREMENT:
7/8 cup cold butter, cubed
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1 3/4 cup all purpose flour
1 cup cake flour
1 tsp. cornstarch
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 cups semisweet chocolate chips
1 3/4 cup walnuts
* NOTE: CAKE FLOUR SUBSTITUTE:
For every 1 cup of all purpose flour, remove 2 Tbsp then add 2 Tbsp of cornstarch. You now have 1 cup of cake flour.
Ghirardelli Double Chocolate Chunk Walnut Vegan Cookies
This tasty treat can satisfy any chocolate lover and they are vegan.
Ingredients:
WET
1 tbsp ground flax mixed with 3 tablespoons water
1/4 cup unmelted coconut oil
1/4 cup almond butter
1/3 cup brown sugar
1/3 cup cane sugar
1 tsp vanilla extract
DRY:
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp fine sea salt
3 tbsp good cocoa powder
1.5 cups rolled oats, processed into flour (or 1.5 cups oat flour)
1-2 teaspoons non-dairy milk (only if needed to moisten batter)
113 grams finely chopped dark ghirardelli chocolate bar
Directions:
Preheat oven to 350F and line a large baking sheet with parchment paper.
In a small mixing bowl, stir the flaxseed and water together and set aside for a few minutes so it can thicken up.
Add the coconut oil, almond butter, brown sugar, cane sugar, vanilla and flaxseed mixture to large bowl and blend until smooth.
Now blend in the dry ingredients, baking soda, baking powder, salt, cocoa powder, oat flour (buy it or make your own).
If your dough is a bit dry, add a teaspoon (or two) of almond milk and beat the mixture again.
The dough should be moist enough to form balls without cracking, but not super sticky.
Finely chop the chocolate.
Stir the chocolate into the batter by hand.
Shape in golf balls sizes of dough and place on the baking sheet 2-3 inches apart.
Gently press down on each ball with your hand to form a disc.
Bake for 13 minutes.
Cool cookies on the baking rack for 10-15 minutes.

* ~ COFFEE WALNUT CHOCOLATE CHIP COOKIES RECIPE ~ *
INGREDIENTS:
- 125g (8 ½ tbsp) softened butter
- 100g (½ cup) soft dark brown sugar, or raw cane sugar
- 100g (½ cup) caster sugar
- 2 tsp vanilla extract or paste
- 1 large egg
- 1 large egg yolk
- 2 shots of espresso, or 1 tbsp of granulated coffee mixed into 2 tbsp boiling water
- 275g (2 cups) plain or ’00’ flour
- 1 tsp bicarbonate of soda
- ½ tsp salt
- 100g (3 ½ oz) chopped walnuts
- 100g (3 ½ oz) milk chocolate chips or chunks
INSTRUCTIONS:
1) In a large bowl, beat together the butter, sugars, and vanilla until just combined.
2) Add the egg and egg yolk one at a time, beating thoroughly between each addition until well incorporated.
3) Beat the espresso/coffee into the mixture until relatively smooth.
4) Tip the flour, bicarbonate of soda, and salt into the bowl, stirring until you have a stodgy dough.
5) Stir through the chopped nuts and chocolate bits until nicely laced throughout the dough.
6) Place the bowl of dough in the fridge to chill for at least 1 hour (or anywhere up to 48 hours!). This allows them to hold their shape better and come out nice and thick and chewy.
7) Preheat your oven – 190°C / 170°C fan / 375°F / gas mark 5.
8) Line 2-3 baking trays with greaseproof paper.
9) Roll lumps of dough into round balls and place onto your prepared trays, you should get 14-16 balls of dough.
10) Bake on their trays for 12-15 minutes until they look dry on top. They may seem underdone but they will firm up as they cool!
11) Cool the cookies on their tray for 10 minutes before cooling completely on wire racks.
12) Enjoy!
