How To make Sean's Holiday Fruitcake

teaspoon
baking soda

pecans, walnuts
Directions:
Grind all the spices in a petal and mortar or any other method you prefer. Using whole spices and grinding just prior to making the fruitcake makes a difference.
Use dried fruit instead of candied fruit.
Toast the nuts in a 300 degree F oven for an hour. Toasting the nuts brings out much more flavour.
Combine fruit, candied ginger and the orange, lemon, lime zest in a large non-reactive bowl. (eg. glass or plastic) Add rum and macerate (marinate) overnight. To speed things up you can microwave for 5 minutes to speed the process.
Place the fruit/rum mixture in a non-reactive pot. Add the suger, butter, apple cider, and all spices. Bring to a boil, stirring often and simmer for 5 or 10 minutes. Remove from heat and cool to room temperature.
Heat oven to 325 degrees F.
Combine the remaining dry ingredients and sift into the fruit mixture.
Using a large wooden spoon mix together quickly. Then stir in eggs one at a time until completly incorporated, then fold in the nuts.
Place the mixture into a 10 inch non-stick loaf pan and bake for 1 hour. Check for doneness with a toothpick in the middle of the cake, if it comes out clean it's done. If it's not done bake for another 10-15 minutes and check again. I find mine usually take a good 1 1/2 hours.
Remove cake from oven and place on a cooling rack. Spitz the top with brandy in a spay bottle (or baste) and allow to cool. Let the cake cool completely before taking it out of the pan.
Once the cake is completely cool, seal in a tight sealing food safe storage container. Check the cake every few days. If it's dry, spritz with more brandy.
The spritzing with brandy is to help prevent the cake from cracking by preventing the surface from drying out.
The cake's flavour will be considerably enhanced by aging over the next two weeks.

Jamaican Fruit Cake!

INGREDIENTS
1/2 lb butter/margarine
1/2 lb dark sugar
6 eggs
1 lb flour
1/4 lb breadcrumbs
3 tsp baking powder
1/2 tsp salt
2 tbsp cinnamon powder
1 tbsp nutmeg
2 tsp mixed spice
3 cups soaked fruits (blended)
1 tbsp vanilla
1/2 cup rum
3 cups red wine
1/4 cup browning
Makes a 9 inch cake

The best fruitcake ever! It's made from a recipe that's over 60 years old and is absolutely delicious! Pecans, cherries, dates, and pineapple are held together with just a whisper of batter.

Ingredients
1 pound pecans
1 pound dates, pitted and chopped
½ pound candied cherries, (red and geen)
½ pound candied pineapple, (red and green or yellow)
¾ cup sugar
¾ cup flour
½ teaspoon baking powder
½ teaspoon kosher salt
3 large eggs
1 teaspoon vanilla extract
Instructions
Preheat oven to 250° degrees (that is not a typo-TWO HUNDRED AND FIFTY degrees)
Place a pan ⅓ filled with boiling water in the oven to create steam. Put it on the rack under the rack where the fruitcake pans will got.
Fill the pan with hot water as needed during baking.
Spray two 9-inch loaf pans with cooking spray and line with wax paper or parchment paper.
Spray wax paper with cooking spray.
Chop dates and nuts.
Add them to a large bowl.
Sift dry ingredients over fruit and nuts and mix in with your hands.
Beat eggs until light, add vanilla and pour over fruit, mixing well. (you will probably need to mix with your hands - it's messy.)
Spoon fruit cake batter into prepared pans, pressing down gently to remove large air bubbles and spaces.
Place the filled loaf pans onto the rack above the pan with hot water.
Bake at 250 for 1 hour and 45 minutes.
Let cool.

If you have run out of time before Christmas or New Years then soak fruit at least a week before or consider stewing the fruits instead.
The longer they soak the better!
Black cake is not only great for Christmas but also for birthdays, anniversaries or weddings! One of my sons & mum are both born in December & love Black cake.
You will need a large bottle of Red wine AND White Rum or Spiced dark rum like Myer's rum, Bacardi rum, Wray & Nephew or any Caribbean rum.
Fruit: One pound of prunes, raisins, currants, mixed peel & half to one pound of maraschino cherries.
A large air tight jar.
After the fruit have soaked sufficiently we will coarsely blend it and add it to the cake batter.
TIP: I placed the cherries in the jar First so that once I pour out the fruit they come out LAST and I can save some of the cherries for the batter & not grind them all or use some of them cut in half as decoration on top of the cake before it fully bakes.
