Recipe: Potato and Jerusalem artichoke pancakes
With foodies talking of little but Nordic cuisine, its time to take a masterclass from Denmark's queen of cooking.
Camilla Plum, author of nine cookery books and star of five TV series, shows Xanthe Clay how to prepare tiny rosti-like pancakes which are perfect with all kinds of smoked fish, gravadlax or fish roe.
Serves six people as a first course, four for a main course
Ingredients
For the pancakes:
12oz/350g potatoes, unpeeled but cleaned
9oz/250g Jerusalem artichokes, unpeeled but cleaned
2 eggs
4 tbsp plain flour
Butter, for frying
For the topping:
11oz/300g lumpfish roe, or as much as you can afford
7oz/200ml crème fraîche
1 lemon, cut into quarters
1 red onion, finely diced
Fresh dill
Grate the raw potatoes and Jerusalem artichokes coarsely. Put them in a colander and rinse the starch from the potatoes under a cold tap. Dry them completely on a towel.
Mix with the rest of the pancake ingredients and season lightly. The result will not look like a batter but rest assured, it will be transformed into crispy potato cakes once fried.
Heat a thick-bottomed iron pan, on a low-medium heat, then add the butter letting it turn nut brown. Spoon the batter into the pan in blobs, and flatten to ½ in/1cm thickness. Cook over a medium-low heat until brown on one side. Turn the pancakes over and brown on the other side until tender — around 10 minutes.
Put them in an ovenproof dish and keep them warm in the oven while you cook the rest. You will need to stir the mixture often, or it will separate.
Serve topped with crème fraîche with the lumpfish roe, crème fraîche, onion and dill, squeezing a little lemon juice over.
You can make them without the Jerusalem artichokes, but they are more subtly delicious if you leave them in.
Here, the pancakes are served with lumpfish roe, crème fraîche, dill and red onion, a combination that works well for a canapé topping. Make the pancakes as usual, but fry them a teaspoonful at a time.
