Roasted Cherry Tomatoes & Garlic????????
Putting my sweet garden tomatoes to use and roasting them with lots of olive oil and garlic is pure heaven! I’ve been doing this for many years before we started growing our own tomatoes and before it became a trend to do ???? (my very first IG post was a pan of roasted summer tomatoes????)
Use whatever amount of cherry tomatoes you have, and however much garlic you like. I used 3 heads of garlic here. Add enough extra virgin olive oil to submerge the tomatoes and garlic just to the very top.
Season with salt and pepper as you like and add a sprig of thyme or even oregano works. Give everything a quick mix.
Preheat oven to 375 F. Cover with aluminum foil tightly. Roast in a pan or dish with high sides for 50 minutes to 1 hour. Remove foil and broil for an extra 2 minutes so the tomatoes can get charred and blistered.
Let it cool before serving. Let it cool completely before storing.
I love to serve this on a slice of sourdough bread fried in the tomato/garlic oil. Adding basil and a sprinkling of parmesan on top makes it taste like a pizza. Its super delicious! You can also add this mixture to some pasta.

Oven-Roasted Cherry Tomatoes + 3 Ways to Use Them!
Roasted Cherry Tomatoes are tossed in olive oil and crushed garlic for a quick, easy, and healthy addition to any pasta, baguette, or grilled chicken recipe. This roasted tomatoes recipe can be made with either cherry or grape tomatoes and is gluten-free, vegan, vegetarian, Whole30, and Paleo-approved.
RECIPE:
INGREDIENTS:
2 lbs. cherry tomatoes or grape, cut in half
2 Tbsp. olive oil
4-6 cloves garlic, crushed
1 tsp. salt
½ tsp. black pepper
Fresh herbs, optional
INSTRUCTIONS:
Preheat oven to 400 degrees.
Toss together tomatoes, oil, crushed garlic, salt, and pepper in a large bowl until tomatoes are well coated.
Place tomatoes on a large baking sheet in a single layer.
Roast tomatoes for 20-25 minutes or until the skin begins to shrivel.
Serve with additional herbs, if desired, with toasted bread, pesto pasta, or on grilled chicken and enjoy!
RECIPE NOTES:
You can also leave the cherry or grape tomatoes whole instead of cutting them in half.
Fresh herbs, such as rosemary, oregano, or basil, can be added in after cooking if desired.
You can also use larger tomatoes that have been cut into smaller pieces and increase the cooking time by 5-10 minutes.

Ingredients:
3 tbsp. butter
3 tbsp. olive oil
4 tbsp. chicken broth
1 1/2 tsp. dried basil
1/2 tsp. dried thyme
1/2 tsp. salt
1 clove minced garlic
1/4 tsp. black pepper
1/8 tsp. hot pepper sauce
2 pints cherry tomatoes
1/4 cup grated parmesan cheese
Directions:
Melt butter over medium heat and stir in olive oil.
Add chicken broth. basil, thyme, salt, garlic, black pepper and hot pepper sauce to mixture, stirring well.
Add tomatoes to mixture and stir to coat.
Saute the mixture, stirring continually, for 5 minutes.
Transfer mixture to a serving dish and sprinkle with Parmesan cheese.
Best served hot.
