1 1/2 lb Fresh green beans, washed -and trimmed 1 md Onion, finely chopped 2 ts Fresh garlic, chopped 1 ts Olive oil* 1 c Fresh sliced mushrooms 1 c Cherry tomatoes, halved Steam green beans until tender. Drain and set aside. Saute onion and garlic in a medium skillet coated with olive oil, until tender. About 2-3 minutes. Add mushrooms and saute until tender. Stir in green beans and tomotoes until heated.

Green Beans & Tomato
1 ½ lb green beans 1 ¼ lb cherry tomato 3-4 garlic cloves, chopped ¼ c. pine nuts, toasted parsley olive oil salt and pepper
Directions:
For the tomatoes: Preheat oven to 375 degrees. Cut tomatoes in half and toss on a baking sheet with chopped garlic, a drizzle of olive oil, salt and pepper. Roast until caramelized, about 30 minutes.
For the beans: Bring a large pot of salted water to a boil. Place beans in water and cook 2-3 minutes, or just until tender. Drain – or drain and then place in a bowl of ice water to stop cooking. Drain again and toss with a little olive oil to coat.
Arrange beans on serving dish and top with tomato, pine nuts and parsley.
