Sauerkraut Ball Recipe. Easy German style recipe. The Mike's Place way in good ole' (Kent, Oh)
At Mike's Place in Kent I'm always experimenting with some kind of new food creation. Some are better left alone, and some are just amazing. My rendition of Sauerkraut Balls was a hit at Mike's! We wanted to make our own but we sell so many we would have spent hours every day making them.

Sour Kraut Balls Recipe The Mike’s Place way!!
Ingredients and Recipe:
Step 1:
1# Whole Hog Pork sausage, cooked, drained and ground
2 tbsp.- Salted butter
½ Sweet Onion, dice fine.
Sautee above in a sauté pan till onions are translucent and mixed well with the ground sausage.
Step 2:
Add to above and mix well and simmer for 5 minutes.
2 tbls Parsley fresh is preferred or dry will work in a pinch
2 to 3 tbsp Caraway Seeds
1 tsp Ground pepper
½ cup chicken broth: (I love Stouffer’s Chicken base!)
2 tbls Regular Mustard
Step 3:
Transfer to a mixing bowl and add:
8oz of softened cream cheese
12 oz of drained and pressed sour kraut. Important get as much moister out as possible!
2 tbls of flour
Step 4:
Mix above well blending cream cheese, flour and kraut together!
Step 5:
Refrigerate mixture for up to 1 to 2 hours. Setup your breading station.
In 3 separate bowls, one bowl of flour, one bowl of egg wash, which is 3 eggs and a 1/3 cup of water mixed well and one bowl of Panco breading.
Step 6:
Roll cool mixture into ¾ inch balls and place on a pan. When balls are formed, roll first in flour, shake excess off, then into egg wash, shake of extra, then roll in Panko and place back on tray.
Step 7:
Deep fry at 350. The Sour Kraut balls will float towards the end, look for a light golden crust. Watch these closely they can go from perfect to a burned mess quickly!
Best Served with Chilled Momma Leone’s Shrimp Sauce, Honey Mustard, 1000 Isle or traditional Shrimp sauce which is made with Ketchup, Horseradish, Lemon juice, White pepper and salt to taste. Mix well and chill.
Note: Whole Hog Sausage could be substituted with ground corned beef, ham, turkey sausage or even cooked hamburger!

Sauerkraut balls 2010
These are absolutely the best Sauerkraut balls you will ever taste. as mom would say - a little bit of this and a little bit of that.
2 lb sauerkraut, ground - don’t forget to drain and get as dry as possible
1 can corn beef, ground
2 lbs cooked ham, ground
1 large onion, ground
1 tsp. salt
1 tsp. pepper
Cream Sauce
1 c milk, ¾ cup flour, ¾ c. melted butter
Cook until thickened. Let the cream sauce cool. Mix cream sauce with main ingredients and elt stand in refrigerator for 1 hour minimum. Take 1 teaspoon of cold mix and roll into ball. Roll ball in flour. Dip ball into beaten egg mix. Roll ball in crumbs (Deep fry magic) Deep fry in vegetable oil until balls begin to float in oil. Let cool on paper towel. Balls may be served hot or stored in freezer in a covered aluminum pan. If frozen, bake for 1 hour at 350 degrees.
